Compared to traditional kielbasa recipes, this sausage and kraut dish is lower in fat and has fewer calories, thanks to the turkey kielbasa. It's still slightly high in sodium, though, if you're watching that.

Yield 4 servings (serving size: 2 pieces kielbasa and about 3/4 cup sauerkraut mixture)

Number Of Ingredients 9

1 teaspoon olive oil
1 pound turkey kielbasa, cut into 8 pieces
1?½ cups chopped onion
1 (16-ounce) jar Bavarian-style sauerkraut, rinsed and drained
½ cup water
½ cup dry white wine or fat-free, less-sodium chicken broth
2 teaspoons caraway seeds
1 bay leaf
¼ teaspoon black pepper

Steps:

  • Heat oil in a Dutch oven over medium-high heat. Add sausage, and sauté 8 minutes or until browned. Remove sausage from pan; cover and keep warm.
  • Add onion to pan, and sauté 2 minutes. Stir in sauerkraut and remaining ingredients. Return sausage to pan; cover, reduce heat, and simmer 20 minutes. Discard bay leaf.

This One-Pot Turkey Sausage and Noodles recipe is quick and easy. A simple dinner idea made with egg noodles, turkey sausage and fresh vegetables.

3 tablespoons olive oil
1 large yellow onion (, thinly sliced)
2 to 3 garlic cloves (, chopped)
4 banana peppers (, sliced into rounds)
2 cups diced fresh tomatoes
1 package ((13-ounces) Turkey Sausage, sliced into 1/4-inch rounds (I used Turkey Sausage by Butterball))
3 sprigs fresh thyme leaves
salt and fresh ground pepper (, to taste)
8- ounces Egg Noodles
1-1/2 cups vegetable broth
1 cup skim milk
1 cup shredded parmesan cheese
crushed red pepper (, for garnish)
parsley (, for garnish)

Steps:

  • Heat olive oil over medium-high heat.
  • Add sliced onions, garlic, peppers, tomatoes, sausage, and thyme leaves.
  • Season with salt and pepper; continue to cook, stirring occasionally, until vegetables are slightly tender; about 5 minutes.
  • Add noodles, broth, and milk.
  • Bring mixture to a boil.
  • Turn down the heat to medium-low, cover the pot, and continue to cook for 12 minutes.
  • Remove from heat and stir in the cheese.
  • Let stand 5 minutes.
  • Garnish with crushed red pepper and fresh parsley.
  • Serve.
