SPICED CRANBERRY HAND PIES | MCCORMICK



Spiced Cranberry Hand Pies | McCormick image

Ditch the traditional pie and try your hand at these homemade hand pies. Each bite of the buttery, flaky crust leads to an irresistible fruity, spiced filling made with Ocean Spray® Whole Berry Cranberry Sauce and Craisins® Dried Cranberries, plus McCormick® Ground Cinnamon and Pure Vanilla Extract.

2/3 cup Ocean Spray® Whole Berry Cranberry Sauce
3 tbsps Ocean Spray® Craisins® Dried Cranberries
1 tsp cinnamon ground
1 tsp pure vanilla extract
1/8 tsp salt
1 1/2 tsps fresh lemon juice
1 tsp cornstarch
1 tsp fresh lemon zest
1 package (14.1 ounces) refrigerated pie crusts (2 crusts)
1 egg lightly beaten
Granulated sugar for sprinkling

Steps:

  • Preheat oven to 400°F. Mix Cranberry Sauce, Craisins®, cinnamon, vanilla and salt in small saucepan. Bring to simmer on medium heat. Mix lemon juice and cornstarch in small bowl until well blended; stir into cranberry mixture in saucepan. Cook and stir 1 minute until thickened. Stir in lemon zest. Remove from heat. Let cool 10 minutes.
  • Unroll crusts on lightly floured surface. Cut out 8 rounds from each crust using 3 1/2-inch round cookie cutter. Spoon about 1 tablespoon cranberry filling onto center of 8 rounds. Brush edges of each filled crust lightly with egg. Top each with a second dough round, pressing edges with the back of a fork to seal. Use a sharp knife to cut small slits or an ‘x’ on top crust to allow steam to escape. Place hand pies 2-inches apart on parchment-lined baking sheets. Brush tops with remaining egg. Sprinkle lightly with sugar, if desired.
  • Bake 18 to 20 minutes or until crust is light golden brown. Serve warm or at room temperature.
  • Test Kitchen Tips:•Swap in your favorite prepared gluten-free pie crust to make this recipe gluten-free. •Drizzle hand pies with a simple vanilla glaze after baking, if desired. Mix 1/2 cup confectioners' sugar, 1 tablespoon milk and 1/4 teaspoon McCormick® Pure Vanilla or Lemon Extract in small bowl. Drizzle over cooled hand pies to serve.

1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 egg, beaten
4 tablespoons apple butter
2 tablespoons sugar

Steps:

  • Heat oven to 350°F. Line cookie sheet with cooking parchment paper or foil.
  • Unroll pie crusts on lightly floured work surface. Use 2 1/2-inch leaf-shaped cookie cutter to cut 24 leaves. (Scraps can be rolled in ball, rolled out with rolling pin and cut to make additional leaves.) Lightly brush each leaf with beaten egg.
  • Place 1 teaspoon apple butter on center of 12 of the leaves. Place another leaf on top of each; gently press edges together to seal. Place on cookie sheet; lightly brush tops with beaten egg, and sprinkle with sugar.
  • Bake 10 to 15 minutes or until golden brown.

When Cornish miners migrated to Michigan's Upper Peninsula in the 1800's, they brought with them their beloved national dish: the pasty. The Finnish miners that followed adopted these meat pies as their own (easily transportable for long subterranean days!), and the pasty became such a large part of the regional culture that there's an annual pasty festival in early July. In this recipe, beef, rutabaga, carrots, onions and potatoes are essentially steamed within the crimped, D-shaped dough pocket that's slit to allow just enough steam to escape.

  • Cut the dough into 6 even pieces, about 5 ounces each, and form into balls. Make sure the dough is cold for easier handling. Flour a work surface and roll out each ball of dough into an 8-inch circle. Evenly divide the filling (about 3/4 cup per pastie) on one half of each dough circle. Fold the dough over to cover the mixture and crimp the edges using a fork. Slice 3 small slits on top of each pocket. This prevents steam from building up and splitting the dough. Brush the pasties with the egg and bake on the prepared baking sheet until the crust is golden brown and flaky, about 1 hour 15 minutes. Serve with ketchup.
