turkey fillet - 2 about 24.5 oz (700 g)
oranges - 1
garlic - 3 cloves
cloves - 3 buds
rosemary - 1 tablespoon dry
parsley - 2 tablespoons dry
black pepper - to taste
onions - 1 tablespoon dried
olive oil - 3 tablespoons + some for sprinkling
salt - to taste

Steps:

  • Cut off the membranes of the fillets, wash and dry them. Dont cut them, you need them whole.
  • Squeeze out the juice of the orange into a bowl, mix it with all of the spices , salt and olive oil (plus mashed cloves ).
  • Grate the garlic finely, rub the turkey meat with it and put it in the prepared marinade. Put away in the fridge for 2-3 hours.
  • Smear the bottom of a tray with a little olive oil. You can cover it with foil if you like, to make clean up easier later.
  • Place the fillets on and pour the marinade over them. Leave for 30 min. at room temperature.
  • Heat the oven to 383°F (195 °C) and bake the meat about 30 min. or until golden in color. Check on it and dont over-bake, so it doesnt turn out too dry.
  • Serve warm with a garnish of vegetables if desired.

Now this is a bit of a posh dinner. I’m talking beautiful roasted pork fillet (which is a brilliant cut of meat that’s great value for money), wrapped in pesto-spiked prosciutto and roasted until tender and juicy. Served with a silky gnocchi and pea gratin, topped with fragrant, crispy sage leaves, this dish is all about big flavours and will make you feel proud.

500 ml semi-skimmed milk
60 g Parmesan cheese
500 g potato gnocchi
320 g frozen peas
8 slices of higher-welfare prosciutto
olive oil
2 tablespoons green pesto
1 x 500 g piece of higher-welfare pork fillet
½ a bunch of sage (10g)

Steps:

  • Preheat the oven to 220°C/425°F/gas 7. Pour the milk into a blender, grate in most of the cheese, add just 10 pieces of gnocchi and a pinch of black pepper, and blitz until smooth to make a sauce. Put the remaining gnocchi and the peas into a 26cm non-stick ovenproof frying pan, place on a medium heat, pour over the sauce and bring to the boil. Meanwhile, lay out a 50cm sheet of greaseproof paper, lay over the prosciutto slices side by side, slightly overlapping, then spread the pesto all over them. Trim the pork of any sinew, rub it all over with a pinch of black pepper, lay it across one end of the prosciutto and use the paper to help you roll it up, wrapping the pork in the prosciutto. Sit it on an oiled baking tray. Finely grate the remaining cheese over the gnocchi, then carefully transfer the pan to the oven. Place the pork at the bottom of the oven and cook both for 30 minutes. About 5 minutes before the time is up, take the pork tray out of the oven and use the sage as a brush to baste the pork with the juices from the tray, then carefully tear the sage leaves over the pork and return to the oven for the remaining time. Remove to rest for 5 minutes, leaving the gnocchi in the oven, then serve the pork and gnocchi together, spooning any remaining tray juices over the pork

    1. Strip the rosemary and thyme into a pestle and mortar with a good pinch of black pepper, bash to a paste, then muddle in the red wine vinegar and 1 tablespoon of olive oil. Rub all over the steaks and leave to marinate for 30 minutes.
    2. Deseed and finely dice the peppers, then dress with extra virgin olive oil and put aside. Quarter the mushrooms, then pick and finely chop the parsley leaves.
    3. Get all the other ingredients measured out and ready to go, as you want everything to happen within 6 minutes once the steaks hit the pan – read to the end of the next paragraph before you start cooking so you know what’s coming.
    4. Place a large frying pan on a high heat to get screaming hot. Brush the herbs off the steaks, then place the steaks in the pan with a drizzle of olive oil and the butter.
    5. Cook for 6 minutes in total, turning regularly and keeping them moving in the pan, making sure to sear the edges and baste with the juices, as you go.
    6. Within this time, as soon as the butter turns dark golden and the steak has good colour and character, add the mushrooms and a pinch of salt and pepper, jiggling the pan to keep things moving.
    7. Pour in the brandy, then carefully tilt the pan to catch the flame (or light with a long match) and let it flambé – stand back! When the flames subside, add the red wine and reduce by half (if you need to put the flame out, swiftly place a large metal lid over the pan).
    8. Drizzle in the cream, turning the steaks in the sauce until they are nicely coated (briefly remove the steaks from the pan at this stage if your sauce is taking a while to reduce, to avoid overcooking).
    9. Sprinkle over the parsley, then stir through the mustards. Slice the steaks in half, place on a warmed plate and drizzle with the sauce, then scatter over the dressed pepper sprinkle and tuck in. Delicious served with shoestring fries.
