2 (10 ounce) packages frozen broccoli spears
¼ cup margarine
6 tablespoons all-purpose flour
salt and ground black pepper to taste
2 cups chicken broth
½ cup heavy whipping cream
3 tablespoons white wine
3 cups cooked turkey breast, sliced
¼ cup shredded Monterey Jack cheese

Steps:

  • Place broccoli in a saucepan with 4 cups of water. Bring to a boil; reduce heat, cover, and simmer until tender, 5 to 8 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt margarine in a saucepan over medium heat; stir in flour, salt, and pepper and mix well. Pour in chicken broth; cook and stir until sauce thickens and bubbles, about 10 minutes. Add cream and wine; stir until well-combined.
  • Arrange broccoli on the bottom of a 7x12-inch baking dish. Pour half of the sauce over the broccoli. Top sauce with sliced turkey. Stir Monterey Jack cheese into the remaining sauce in the saucepan. Pour cheese sauce over the turkey.
  • Bake the turkey divan in the preheated oven until bubbly, about 20 minutes. Broil until the cheese sauce is golden, about 5 minutes.

I got this recipe from Recipes from Miss Daisy cookbook. It's a good way to use leftover turkey. I usually use chicken when I make this dish.

2 (10 ounce) packages frozen broccoli or 2 bunches fresh broccoli
2 -3 cups cooked turkey, diced
2 (10 ounce) cans cream of chicken soup
1 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/2 cup shredded sharp cheddar cheese
1/2 cup toasted breadcrumb
1 tablespoon butter

Steps:

  • Cook broccoli according to package directions being sure not to overcook; drain.
  • In a 9x13 dish put a layer of broccoli and turkey.
  • To prepare sauce mix remaining ingredients except bread crumbs and butter.
  • Pour sauce on the turkey and broccoli.
  • Top with bread crumbs and butter.
  • Bake 350 degrees for 25-30 minutes.

  • Preheat oven to 375°. Grease a 2-quart baking dish with butter. In a medium saucepan over medium-high heat, melt 4 tablespoon butter. Add onion and garlic and cook until soft, stirring occasionally, about 5 minutes. Sprinkle flour over and cook, stirring constantly, 1 minute, then stir in mustard. While whisking, slowly pour in milk and then broth. Bring to a simmer and continue to whisk until thickened, about 7 minutes. Reduce heat to low and whisk in cheese, sour cream, and cayenne pepper until full combined. Remove from heat. Season generously with salt and pepper and stir in turkey and broccoli.  Spread turkey mixture in the bottom of prepared pan and season with salt and pepper.  Cover dish with foil and bake until broccoli is tender, about 40 minutes.  Melt remaining 2 tablespoons butter and stir crackers into butter. Remove foil and top with cracker mixture. Continue to bake until cheese is golden and bubbly, about 25 minutes more.  Sprinkle with chives before serving.
