1 1/2 pounds ground turkey
1/3 cup fresh parsley, minced
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
2 cloves garlic, minced
2 shallots, minced
1 egg yolk
Sea salt
Freshly cracked pepper
2 tablespoons olive oil
12 mini burger buns or small soft dinner rolls, warmed in the oven
12 small lettuce leaves
12 slices tomato
1 cup thinly sliced red onions
Mayonnaise
Mustard
Ketchup

Steps:

  • Mix together the turkey, parsley, cumin, paprika, garlic, shallots and egg yolk in a large bowl. Sprinkle with salt and pepper and mix. Divide the turkey mixture into 12 equal portions and, using your hands, shape into 12 small burgers about 3 1/2 inches wide. Heat the oil in a pan and cook the burgers until a thermometer inserted into the center registers 165 degrees F, about 3 minutes per side. Serve the burgers on the mini buns with the lettuce, tomato and onions. Garnish with mayonnaise, mustard and ketchup to your liking.

Mini turkey burgers made with goat cheese and sun-dried tomatoes! This recipe makes great regular sized burgers, too!

1 pound ground turkey
? cup goat cheese
¼ cup sun-dried tomatoes packed in oil, drained and chopped
1 clove garlic, minced
½ cup panko bread crumbs
¼ teaspoon salt
¼ teaspoon ground black pepper
? teaspoon hot chili flakes
¼ cup all-purpose flour
¼ cup olive oil
½ cup white wine
16 mini dinner rolls, split

Steps:

  • Mix the ground turkey, goat cheese, sun-dried tomatoes, garlic, panko bread crumbs, salt, pepper, and hot chili flakes together in a large bowl with your hands until evenly mixed. Form the mixture into patties about 3-inches in diameter. Dust each patty lightly with flour on each side. This will allow patties to brown nicely in oil.
  • Heat the olive oil in a large skillet over medium-high heat; cook the patties in the hot oil until browned, 2 to 3 minutes per side. Pour the white wine over the patties, place a cover over the skillet, and continue cooking until the sliders are no longer pink inside and the juices run clear, about 5 minutes. Remove the sliders to a plate lined with paper towels to drain. Serve on the mini dinner rolls.
