These oven-crisped potatoes are the perfect side dish when you’re making a burger, and they’re also great with steak or chicken. You can toss the potatoes with any combination of dried herbs that you like to easily amp up their flavor.

2 medium Sun-dried tomatoes (without oil)
5 oz Uncooked extra lean ground turkey breast
0.5 tsp Dried basil or Italian seasoning blend
0.25 tsp Table salt divided
0.125 tsp Black pepper
4 oz Uncooked potato(es) 1 small Russet, cut into 1/4-inch-thick wedges
1 tsp Olive oil divided
0.5 small Uncooked onion(s) thinly sliced
0.5 small Sweet red pepper(s) thinly sliced
1 medium clove(s) Garlic clove(s) minced
1 tsp Balsamic vinegar
1 item(s) Reduced calorie hamburger bun(s)

Steps:

  • In small cup, place sun-dried tomatoes and cover with boiling water. Let sit 10 minutes. Drain and finely chop.
  • Preheat oven to 425°F. Coat large baking sheet with cooking spray.
  • In medium bowl, combine turkey, sun-dried tomatoes, basil, 1/8 tsp salt, and black pepper. Mix with your hands or rubber spatula just until combined. Form into 1/2-inch-thick patty and set aside.
  • In small bowl, combine potato wedges, 1/2 tsp oil, and remaining 1/8 tsp salt. Onto prepared baking sheet, spread wedges in single layer. Place in oven and roast 6 minutes. Push potatoes to 1 side and add turkey patty to baking sheet; roast 6 minutes longer. Turn potatoes and turkey patty over and roast until potatoes are browned and crisp and instant-read thermometer inserted into patty registers 165°F, 12 to 14 minutes longer.
  • Meanwhile, in small skillet over medium-high heat, warm remaining 1/2 tsp oil. Add onion and bell pepper and cook 1 minute. Stir in garlic and cook, stirring occasionally, until softened, about 3 minutes. Add vinegar and cook, stirring, 30 seconds longer.
  • Fill roll with turkey burger and onion mixture. Serve with oven fries.
  • Serving size: 1 burger and 1 cup fries

0.25 ounce Fresh Thyme
2 Dill Pickle
8 ounce Ground Turkey
2 tablespoon Dijon Mustard
0.25 ounce Fresh Parsley
1 Tomato
1 Egg
2 piece Escarole Lettuce
6 tablespoon Ketchup
2 Russet Potato
2 Whole Grain Bun
1 tablespoon Olive Oil
1/2 teaspoon Salt
1/2 teaspoon Ground Black Pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove Fresh Thyme (0.25 ounce) leaves and mince. Set aside. Remove Fresh Parsley (0.25 ounce) leaves from the stem, roughly chop leaves, and set aside. Cut the Tomato (1) into quarter inch slices, and set aside.
  • Fill a medium bowl with cold water. Peel the Russet Potato (2). Cut lengthwise into quarter inch planks. Stack several potato planks on top of each other and then cut them lengthwise again into half inch slices, making fries. Place potatoes in the water.
  • Drain the potatoes into a colander and dry out the bowl with paper towels. Pat dry the potatoes and then place back into the bowl. Drizzle with Olive Oil (1 tablespoon). Add half of the thyme leaves and season with Salt (1/4 teaspoon) and Ground Black Pepper (1/4 teaspoon). Toss.
  • Place the potatoes in a single layer onto a sheet pan lined with parchment paper and bake for 30 minutes until golden brown. Rinse and dry bowl.
  • Place the Ground Turkey (8 ounce) into the medium bowl. Season with Salt (1/4 teaspoon) and Ground Black Pepper (1/4 teaspoon). Add the Egg (1), thyme, and parsley. Mix well until fully combined.
  • Form the mixture into two equal sized patties. Heat a large saute pan over medium high heat.
  • Place the burger patties onto the pan. Cook for two minutes.
  • Transfer to one side of a sheet pan, and finish burgers in the oven for 7 minutes.
  • Place the Whole Grain Bun (2) face side up on the other side of the sheet pan for the final minute of cooking.
  • Spread one tablespoon of Ketchup (6 tablespoon) and Dijon Mustard (2 tablespoon) on each bottom bun. Add the turkey patties and top each with an Escarole Lettuce (2 piece) leaf, tomatoes, and Dill Pickle (2). Place the top bun on the burger.
  • Place turkey burgers on two separate plates. Divide the fries evenly and serve with ketchup on the side.
  • Serve and enjoy!
