One packet of Turkey Bacon
One cookie sheet or a baking sheet
Aluminium Foil or parchment paper

Steps:

  • Before you start with your cooking, preheat the oven to 400°F (204°C). Then fold a sheet of aluminium foil.
  • Tear off the sheet of foil that's 2 inches (5.1 cm) to 3 inches (7.6 cm) longer than the baking sheet that you are using
  • Keep folding the back and forth like an accordion (fan-shaped). Make proper ridges in your foil that are 1 inch (2.5 cm) tall
  • Foil ridge helps the bacon to be cooked properly and give it natural crisp. If you need flat bacon, you can lay a sheet of foil on a baking sheet.
  • Arrange the turkey bacon across the foil ridges. You have to place the ridged foil on the baking sheet and lay as many turkey bacons pieces across the foil
  • Do not overlap the bacon strips, or else your bacon won't crisp up
  • Bake your turkey bacon for about 7 to 8 minutes only
  • Put the baking sheet inside the preheated oven, then bake your turkey until the bacon turns golden or brown and crispy
  • As soon as the turkey bacon's sides look dry and crunchy, you can flip the slices of bacon
  • After flipping the strips, bake the other side of the slices for 7 to 8 minutes more
  • Using ridged foil is a good way to avoid flipping the slices as it makes the presence of the ridged shape possible all by itself. But tongs can be used to flip the turkey if you are using a flat sheet of aluminium
  • Cook your turkey bacon for 7 to 8 minutes more so it can become absolutely crispy.
  • Please take out your bacon from the oven and serve it. Do use oven gloves to take the pan out of the oven to keep your hands safe.

    2. Preheat the oven to 180ºC/350ºF/gas 4.
    3. You want to cook a higher-welfare bird for 25 to 30 minutes per kilo, and a standard bird for 35 to 40 minutes per kilo. Higher-welfare birds generally have more intramuscular fat, which means they cook quicker than standard, lean birds. If you’ve got a 7kg bird, like I had here, do it for just over 3 hours, based on the guideline timings above.
    4. Just under 1 hour before the time is up, get the tray out of the oven and remove the tin foil.
    5. Cover the bird with your rashers of bacon, stretching and weaving them into a criss-cross pattern however you like. Return the turkey to the oven for the remaining time, or until golden and cooked through.
    6. The simplest way to check it’s cooked is to stick a knife into the thickest part of the thigh – if the juices run clear, it’s done. If you’re worried, use a meat thermometer. You want to reach an internal temperature of 65ºC for a top-quality bird, such as Paul Kelly’s turkeys, or 70ºC for a supermarket higher-welfare or standard bird.
    7. Use heavy-duty tongs to lift up your bird so all the juices run from the cavity into the tray, then transfer the turkey to a platter, cover with a double layer of tin foil and a clean tea towel, and leave to rest for up to 2 hours while you crack on.
    8. Use your tray of trivet veg and juices to make your gravy. Place the turkey tray over a medium heat on the hob. Skim away most of the fat from the surface into a jar, cool, and place in the fridge for tasty cooking another day.
    9. Stir the flour into the tray, mashing up all the veg and scraping up all the sticky bits from the base. Pour in up to 2 litres of boiling kettle water and simmer until the gravy is the consistency of your liking, then stir in the cranberry sauce.
    10. Strain the gravy through a coarse sieve, pushing all the goodness through with the back of a spoon, then season to perfection.
    11. Keep warm over the lowest heat until needed, adding any extra resting juices from the turkey before serving.

    1. Preheat the oven to maximum. Heat a saucepan until medium hot and add a splash of olive oil. Pick the sage leaves and add to the pan with 6 of the pancetta or bacon strips.
    2. Peel and chop 2 garlic cloves and 1 onion. Trim and chop the celery and add to the pan with the garlic and onion. Fry everything gently until soft and golden brown. Take the pan off the heat, add the breadcrumbs and, while the mix is cooling down, roughly chop the apricots and stir them in.
    3. When the stuffing has cooled down, add the pork, lemon zest, nutmeg, egg and lots of sea salt and freshly ground black pepper, and mix everything together well. Slice the remaining strips of pancetta or bacon in half and peel and slice 1 peeled garlic clove into thin slivers. Place a rosemary sprig and a garlic sliver on one end of a halved strip of pancetta and roll it up tightly. Repeat with the other pieces of pancetta until you have 12 little rolls.
    4. Stab the thighs and drumsticks of the turkey in 6 places on each side. Push a little pancetta roll into each hole until it just peeps out. This will give your turkey thighs a fantastic flavour and will keep them moist while they cook.
    5. Peel the remaining onions and chop in half, and peel and thickly slice the carrots.
    6. Give your turkey a good wipe, inside and out, with kitchen paper, and place it on a board, with the neck end towards you. Find the edge of the skin that's covering the turkey's breasts and gently peel it back. Work your fingers and then your hand under the skin, freeing it from the meat. If you're careful you should be able to pull all the skin away from the meat, keeping it attached at the sides. Go slowly and try not to make any holes!
    7. Lift the loose skin at the neck end and spoon the stuffing between the skin and the breast, tucking the flap of skin underneath to stop anything leaking out. Pop the orange in the microwave for 30 seconds to warm it up and stuff it into the cavity.
    8. Weigh the stuffed turkey and calculate the cooking time (about 20 minutes per 500g/1lb 2oz).
    9. Place the bird on a large roasting tray, rub it all over with olive oil and season well. Surround with the chopped carrots, onions and remaining cloves of garlic, cover with tin foil and place in the preheated oven. Turn the heat down right away to 180°C/350°F/gas 4 and roast for the calculated time, or until the juices run clear from the thigh if you pierce it with a knife or a skewer. Remove the tin foil for the last 45 minutes to brown the bird.
    10. Carefully lift the turkey out of the tray and rest on a board covered loosely with foil for at least 1 hour, preferably 2 hours for bigger birds.
    11. When the resting time's nearly up, skim off the surface fat from the roasting tray and add the flour and stock. Place the tray on the hob and bring to the boil on a high heat. When the gravy starts to thicken, strain it into a bowl.
    12. Carve your turkey, serve with the gravy and dig in!
