How to make Ridge Gourd

500 gm Turai (Ridge Gourd)
2 Finely chopped onions
½ tbsp Jeera (Cumin seeds)
½ tbsp turmeric powder
1 tbsp Coriander Powder
Salt (as per taste)
½ tbsp Red chili powder
3-4 Moth Dal Wadi
1 Chopped Green chilli

Steps:

  • Firstly, wash and peel the skin of the Turai and chop it.
  • Heat a pan and add jeera(cumin seeds), chopped onions,and ½ tbsp of turmeric powder in the pan.
  • Then add chopped green chilli. Mix it.
  • After that add chopped turai in the pan. Mix it for 5 minutes.
  • Add 1 tbsp of coriander powder, ½ tbsp of red chilli powder, 3 moth wadi and salt (as required). Mix it very well.
  • Now, cover the pan and let it cook, stir it in small intervals.
  • You can notice turai is leaving the water naturally don't worry about let it dry.
  • When turai is completely dry that means turai is now ready to serve and please don't forget add desi ghee on it and take raw green chilli while serve that chilli gives a little crunch in the bite and ghee enhances the flavor of the turai.

Ridge gourd (turai),Ghee,Cumin seeds,Onions,Ginger,Green chillies,Turmeric powder,Tomatoes,Coriander powder,Red chilli powder,Dried mango powder,Garam masala powder,Salt,Potato,

Steps:

  • Heat ghee in a pressure cooker and add cumin seeds. When then begin to change colour, add onions and sauté till transparent.
  • Add ginger, green chillies and turmeric powder and saute till the onions turn light brown. Add tomatoes and cook till they are soft.
  • Add coriander powder, red chilli powder, dried mango powder, garam masala powder and salt. Sauté till the ghee separates from the masala.
  • Add the ridge gourd slices and potato cubes and saute for three to four minutes. Add half cup water and pressure cook till two whistles are given out. Serve hot.
