Turmeric Chicken-Stuffed Peppers Recipe | Cooking Light image

Curcumin, the bright yellow polyphenol compound found in turmeric, has anti-inflammatory and antioxidant effects. Preliminary research suggests curcumin may promote weight loss, lower risk of heart disease, and improve blood sugar control. Use a red bell pepper for 8 times more beta-carotene and 1.5 times more vitamin C than green.

Yield Serves 1 (serving size: 2 stuffed bell pepper halves)

Number Of Ingredients 8

1 red bell pepper
Cooking spray
4 ounces chicken from Turmeric-Roasted Chicken with Farro
1/2 cup cooked farro from Turmeric-Roasted Chicken with Farro
2 teaspoons olive oil
2 tablespoons crumbled feta cheese
1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 350°F. Cut pepper in half lengthwise; discard seeds and membranes, leaving stem intact. Place pepper halves, cut sides up, in a small baking dish. Coat with cooking spray, and cover with foil. Bake at 350°F for 25 minutes. Chop chicken, and place in a bowl. Stir in farro and olive oil. Divide mixture evenly into both bell pepper halves. Bake at 350°F, uncovered, for 6 to 7 minutes, until chicken mixture is heated through. Sprinkle feta cheese, parsley, and lemon juice evenly over top.

How to Make Turmeric Tea Latte with Black Pepper Recipe
You ever woke up with the weirdest crick (is that a word) in your neck? I did, It was the most obnoxious pain, I didn't want to look left or right. My Doctor ended up telling me I was having a spasm in my back because I must have lifted something the wrong way and now the pain wassssssssss overwhelming. I wanted to find something that would assist with inflammation soo I checked herbs and spices and grabbed old faithful.. Turmeric Root and Black Peppercorn. The turmeric tea latte with black pepper is my go too, It's simple tasty and really helps with speeding up the process of getting my back out of this spasm!!
Just know that the recipe is simple. Anyone can make this, and it’s a living recipe so if you want it sweeter add more agave... want to be fancy add a vegan whipped topping. #JustSaying?!
