Roasted Cauliflower Parmesan

1 cup tomato puree
1/4 cup clarified butter or ghee, melted
2 tsps dried oregano
1 tsp garlic powder
sea salt and ground black pepper, to taste
1 large head of cauliflower, cut into 1/4-inch thick slices
3 oz Parmesan cheese

Steps:

  • Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper.
  • In a large bowl combine the tomato puree, melted butter, and spices. Whisk together really well using a fork.
  • Dredge or dip your cauliflower slices into this sauce mixture and gently push and firmly press each piece to coat really well with the sauce mixture.
  • Transfer your coated cauliflower pieces to your prepared pan.
  • Sprinkle with Parmesan cheese.
  • Bake for 30 - 35 minutes, or until cauliflower is tender-crisp.
  • Enjoy!

2 tablespoons vegetable oil
1 onion, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
2 (14.5 ounce) cans chicken broth
1 (10 ounce) can diced tomatoes with green chile peppers
2 (15 ounce) cans black beans, drained
1 (15 ounce) can pinto beans, drained
2 (15 ounce) cans kidney beans, drained

Steps:

  • In a large saucepan over medium heat, cook onion, green and yellow bell peppers in oil until softened. Stir in chicken broth, tomatoes, black beans, pinto beans and kidney beans. Heat through.
