Here's a great recipe for cooking your Trotters whole. "Kasi style"

Number Of Ingredients 4

2 kg Amanqina (pork trotters)
Water
2 Stock Cubes (you can use Beef, Mutton or Chicken stock)
Salt to taste

Steps:

  • Wash and clean your trotters thoroughly.
  • Add your trotters to a pot. Add water enough to cover your trotters and bring to boil. Once boiling turn down the heat and allow to simmer for 30 minutes.
  • Add your stock cubes, allow to simmer on low to medium heat for a further 1½ hours or until soft. Add salt to taste.
  • Serve and enjoy!

Number Of Ingredients 19

Add all the paya (trotters) to the pot add with
1 Heaped tablespoon Ginger Garlic paste
1 teaspoon tumeric
Add 1 litre water
Add the paya (trotters) again to the pot with more water with all the spices and little Ginger Garlic Boil till soft +- 1 hour and the meats almost falling off the bone
Add 1 large sliced onion
Little whole Jeeru (Cumin), Elachi (cardomom) pods
Add 1Tblsp ginger garlic paste
½ teaspoon Crushed Garlic or sliced garlic
+- 2 tablespoon Shans paya (trotters) spice or any brand
2 Level teaspoon Dhana Jeera mix (Don't Over spice)
+- 1 teaspoon tumeric again
+- 1 teaspoon Durbs masala
1 teaspoon Green chilli paste
All the paya (trotters) Braise till spices are well mixed then add
2 Medium liquidised Tomatoes
(Optional: if you adding Dhals : Lastly add the Boiled dhal)
Add water and cook
And green chopped dhania (coriander) and shallot
