Here's a great recipe for cooking your Trotters whole. "Kasi style"

2 kg Amanqina (pork trotters)
Water
2 Stock Cubes (you can use Beef, Mutton or Chicken stock)
Salt to taste

Steps:

  • Wash and clean your trotters thoroughly.
  • Add your trotters to a pot. Add water enough to cover your trotters and bring to boil. Once boiling turn down the heat and allow to simmer for 30 minutes.
  • Add your stock cubes, allow to simmer on low to medium heat for a further 1½ hours or until soft. Add salt to taste.
  • Serve and enjoy!

pork trotters - 6
onions - 2 heads
celery - 1/2 root
carrots - 3
potatoes - 2
peppers - 1 - 2, red
cumin - 1/2 tsp
black pepper - to taste
paprika - 1 tsp
salt
bay leaf - 2

Steps:

  • Clean the pork trotters and put them to boil in a pot with the bay leaves, a little salt and black pepper. Then remove the half-boiled trotters from the heat.
  • Cut all the vegetables and put them in a pressure cooker. Add the trotters with half of their broth. Season with spices and close the pressure cooker. Boil for about an hour.
