Number Of Ingredients 7

1 cup lime juice, fresh squeezed
2 cups sugar water (syrup)
3 cups rum
4 cups orange juice
ice, to serve (lots of)
500 g white sugar (add up to 1kg for sweeter)
1 liter water

Steps:

  • to make sugar water:.
  • put sugar & water in saucepan, cook over high heat until all sugar is thoroughly dissloved.
  • set aside to cool.
  • bottle & refidgerate.
  • PUNCH:.
  • pour ALL ingredients into large punch bowl.
  • Stir to combine.
  • Add LOTS of ice.
  • SERVE in punch glasses OR tall glasses for the brave !

There are as many rum punch recipes and speculated origins as there are islands in the Caribbean. In fact there may even be more when we consider that most families have their own versions of this “get-the-party-started” guarantee that’s always served on the rocks.Our recipe (which is the best!) is from Ethné's family, in Trinidad, and it respects their rules to the last sip: Angostura bitters is a must followed by grated nutmeg as a finishing touch.

Number Of Ingredients 8

1 cup raw sugar
½ cup water
1 Tbsp Angostura bitters
2-2½ cups good dark rum
½ cup lime juice
½ cup other citrus juice of choice
Nutmeg

Steps:

  • 1. In a small saucepan, dissolve water and sugar on medium heat. Remove from heat and let cool. 2. In a pitcher, combine rum, juices, bitters, and syrup. 3. Fill glasses half-full with ice. Pour punch. Grate a pinch of nutmeg into each glass. Enjoy!

The traditional Caribbean Christmas cake, aka euphoria! This heavy-duty rum fruit cake takes some time to make: with the minimum soaking time the recipe extends over two days, but I always take a month! However, it's of course not active working time ;-) and the cake is not difficult to make at all, so don't let the length of the instructions scare you! The most tedious part is chopping the fruit - try to resist to urge to use a food processor, as chopping by hand will give you the best results. Have a glass of wine, listen to your favourite music and make a night of it! If, however, you do give in to temptation, be very careful not to process the fruit into a sticky mass: you want finely chopped, not jam! Serve this wonderful cake in thin slivers with a dollop of whipped cream.
