This sandwich is a favorite in the Bon Appétit Test Kitchen. It's a clever—and delicious—way to clean out the fridge.

Number Of Ingredients 9

1 1-pound ciabatta, focaccia, or pain rustique, cut horizontally in half
1/2 cup pesto or roasted red pepper spread
1/4 cup mayonnaise
8 thin cheese slices (such as Jack, Swiss, or Havarti)
9 ounces assorted deli meats (such as salami, mortadella, prosciutto, ham, and turkey)
2/3 cup sliced drained peperoncini or pickled jalape&ntlde;o chiles
Thinly sliced red onion
Sliced tomatoes
Arugula or other lettuce

Steps:

  • Preheat oven to 400°F. Place bread, cut side up, on baking sheet. Mix pesto and mayonnaise in small bowl; spread over both cut sides of bread. Arrange cheese on bottom half of bread. Bake bread halves until lightly toasted, about 10 minutes. Top cheese with meats, then peperoncini, onion, tomatoes, and arugula. Cover with top half of bread. Cut lengthwise in half, then crosswise into 6 sandwiches.

No matter how dry or flavorless you think last night’s turkey is, this cheese sauce will save it.

Yield 4 Servings

Number Of Ingredients 11

½ cup (1 stick) unsalted butter
4 garlic cloves, finely chopped
1 small onion, chopped
1 pound leftover turkey meat, torn or cut into bite-size pieces
6 ounces white American and/or provolone cheese, chopped
Kosher salt, freshly ground pepper
? cup leftover cranberry sauce
3 tablespoons mayonnaise
4 large rolls, toasted
Reheated leftover mashed potatoes (for serving; optional)
2 pickled hot cherry peppers, seeded, chopped

Steps:

  • Melt butter in a small saucepan over medium heat. Cook garlic, stirring often, until fragrant and soft (do not let it brown), about 4 minutes. Spoon half of garlic butter into a small bowl; set aside.
  • Add onion to saucepan and cook, stirring often, until soft, 6–8 minutes. Add turkey and cook until warmed through, then add cheese a little at a time, stirring until melted before adding more. Season with salt and pepper.
  • Mix cranberry sauce and mayonnaise in a small bowl to combine.
  • Brush reserved garlic butter over toasted buns and assemble sandwiches with mashed potatoes, if using, cheesy turkey, pickled peppers, and cranberry mayonnaise.
