This recipe is result of request by many forum members. My first recipe here, and on top of it, transated from Slovak / Czech original (well, but by native Czech chef), so bear with me :-) Some history - original recipe is dated to 17th century, perhaps the original is from Hungary or even Easter parts of Europe. TRDLO - the exact translation is "clodpole, or clodpoll or goofy", but meaning here is the wooden stick, about two feet long and 3 to 4 inches in diameter, which this sweet pastry is supposed to be baked on. Original recipe calls for baking it over open fire (hot coals), wrapped around this buttered wooden stick. However, metal works too. After many sleeples nights I found solution, which easily allows me (now you too)to prepare this in USA. (aren't I a clever boy :-))) Round wooden stick is still needed (any hardware store), can be wrapped in AL foil, if you don't trust the bare wood. Best part for upcoming warm weather - the grill. Yea, get your grillmaster out of there and rig this trdlo, (ok, we'll call it wooden stick) over the grill. Do not try to lay it on the grill screen, has to be above in the air!! Take the grilling screen out if possible and bake the trdelnik over the hot coals. This easy setup will allow you to bake it the way it was last couple hundred years, no oven or such, this is awsome and super easy fun.

2 lbs all-purpose flour
5 ounces unsalted butter
1/2 cup powdered sugar
5 egg yolks
1 ounce fresh yeast
1/2 cup milk (milk as needed, nonexistent exact measure)
1 cup walnuts (finely chopped)
1/2 cup granulated sugar
1 egg

Steps:

  • Please read the description part first, as it's essential for this recipe. Thak you.
  • First stiff into large mixing bowl flour and powdered sugar. Make a small hole in the middle and place into it crumbled fresh yeast. Pour lukewarm milk over the yeast. Let it rise for about 10 minutes.
  • Meanwhile melt the butter.
  • Add egg yolks into the bowl, pour in melted, but not hot butter, add pinch of salt.
  • Mix together to make fairly firm dough, well worked (use stand mixer, it's easy).
  • Let the dough rise for 20 minutes in warm place.
  • Divide into five equal parts, make loafs.
  • You can let it rise for another 20 minutes (it's better, but not necessary if fresh yeast used, a must with dry yeast).
  • Roll out each loaf into 2/3 inch diameter /caster?/ - you know what I mean, thin, cylindrical shape, like a small snake :-)).
  • lol.
  • Wrap the dough tighty around the BUTTERED "trdlo" wooden stick. Let it stand for ten more minutes (support the ends, so it will be in the air).
  • Glair with the last egg, cover all around with chopped walnuts and granulated sugar.
  • Bake as described above over hot coals on the grill. Results MAY be achieved with oven, but . . . .
  • The pastry need to be turned pretty often during baking, and baked until golden red color. Baking time is not determined, since baking over hot coals and on open air, but from my experience about 20 to 40 minutes, also depends on size you making.
  • When cooled down a little,
  • slide the baked pastry of the wooden stick, cut into individual servings, sprinkle with powdered sugar, enjoy.
  • Also you can cover it in various nuts, coconut and such.
  • Makes five, baked on two feet long, three inch diameter wooden stick.
  • I tried to have your reading bit more enjoyable, if there is something not so clear (this recipe is VERY unusuall), feel free to ask.

@mia2404 sem pridala úžasný nápad, upiect trdelníky na prázdnych plechovkách. Tak som si povedala, že to skúsim, ale z iného cesta a iným postupom ako ona. Recept na cesto je zo starej kuchárskej knihy a podla zloženia som dúfala, že budú také dobré ako tie, co nám na internát nosila Klárika z Unína.

múka polohrubá, 500 g
mlieko , 350 ml vlažná
cukor kryštálový, 75 g
droždie, 15 g
maslo, 75 g
sol, 1/2 KL
žltky, 3 ks
bielky, 2 ks
orechy posekané, 150 g
cukor kockový drvený, 150 g
cukor vanilkový, 1 ks

Steps:

  • Múku odvážime a preosejeme do misky. Moja miska na váhe je malá, aj sitko nie je práve najväcšie, tak musím vážit dva razy 250g.
  • 2 lyžicky múky a lyžicku z odváženého cukru si odoberieme do hrnceka na kvások. Zvyšný cukor pridáme do múky, prihodíme aj sol a maslo pokrájané na menšie kúsky. Všetko premiešame a múku rozdrobíme s maslom, kým nebude pripomínat posýpku na kolác. Mohla som to maslo síce roztopit, ale cast z neho vždy ostane v mišticke a ktovie aká cast, o kolko viac by bolo treba navážit? Takto je to presne.
  • Do múky prihodíme tri žltka.
  • Do hrnceka pridáme kvasnice a asi 1 dcl vlažného mlieka a spravíme kvások. Ak sa váš manžel volá inak ako ten môj, tak takýto pekný hrncek asi nemáte, ale použite ten s menom vášho manžela, alebo aj bez mena, kvások vykysne tak ci tak.
  • Vykysnutý kvások pridajte do misy a po castiach k nemu prilievajte aj mlieko. Pôvodne som si zohriala len 250 ml, tak bolo v recepte, ale múka bola suchá ako trúd, tak som musela pridat ešte 100 ml. Cesto nemusíte vypracovávat, len ho nechajte asi 15 minút stát a vypracujete ho potom.
  • Ked ho premiesite, nechajte ho kysnút ešte 45 minút a vyklopte na pomúcenú dosku.
  • Cesto rozdelte na pät bochníkov, prikryte utierkou a nechajte ešte 15 minút kysnút. Vidíte štyri bochníky? Vidíte dobre, myslela som, že to bude na štyri plechovky, ale nechcelo sa mi to tam zmestit, tak radšej si rovno spravte pät.
  • Plechovky som obalila alobalom, ako poradila Mia a bolo ich treba natriet olejom. Ako? Štetcom? To by asi bolo viac oleja na podložke ako na alobale, tak som si trochu oleja naliala do dlaní a plechovky pekne poobjímala, hned boli správne mastné. A teraz nastal cas vyšúlat bochník na hada hrubého asi ako prst a navinút na plechovku. Zacala som navíjat na stojáka, ale to mi vôbec nešlo. Tak som hada nechala na doske, plechovku položila na koniec hada a otácala som plechovkou, nie cestom. Tak sa to ako tak darilo, ale po prvých dvoch neúspešných pokusoch som cesto z plechoviek stiahla, premiesila a zacala znovu. Vôbec to tomu cestu neprospelo, poviem vám, vytlacila som z neho vzduch, tak som ho navinuté na plechovkách opät zakryla a nechala ešte 15 minút kysnút. Casu a casu, ale medzitým co som od neho odbiehala som stihla vytepovat celú sedacku, takže rozhodne to nebol cas stratený.
  • Kým kysnú, treba pripravit orechy a cukor. Nechcelo sa mi sekat v ruke, tak som použila môjho malého pomocnícka. Orechy posekal akurát, ale ten kockových cukor drvil až príliš (nechápal, že nechcem práškový ale väcšie kúsky) tak som si cukor nadrvila rucne v mažiari.
  • Bielka prešlaháme vidlickou. Nie na sneh, len tak aby povolili a dalo sa nimi natierat.
  • Orechy a cukor zmiešame, pridáme k nim vanilkový cukor a rozprestrieme ich na papier, aby sa nám trdelníky potreté bielkom dali po nich pogúlat a aby sa nám to na ne dobre nalepilo.
  • A ideme do finále. Trdelníky natierame bielkom, obalujeme v orechovej zmesi a staviame na plech vyložený papierom na pecenie. Tak som sa sústredila, aby mi riadne stáli a aby nespadli, ked ich budem prenášat do vyhriatej rúry, že som ich zabudla odfotit. Tak aspon pohlad do rúry.
  • Hotovo, upecené. Dala som ich na najspodnejšie priecku, ale aj tak sa piekli viac zvrchu, hoci bol zapnutý ventilátor. Po pätnástich minútach som plech otocila predkom na zadok, lebo sa mi zdalo, že spredu sa pecú viac. A ako to dopadlo? No trochu sa z tých plechoviek zviezli, takže dole sú širšie ako hore, ale asi to nevadí, manžel povedal, že lepší trdelník v živote nejedol (no ale on nemal spolužiacku Kláriku!). Nabudúce ich asi skúsim spravit na valceku na cesto, len si jeden budem musiet priniest z chalupy, aby som mohla naraz upiect aspon dva kusy.
