GALAXY CLEAR JELLY CAKE RECIPE BY TASTY
Here's what you need: silver sugar pearl, hot water, agar, sugar, water, water, blue hawaii syrup, strawberry syrup, agar powder, ice ball tray

Steps:
- Make the star mixture: In a small bowl, combine the sugar pearls and hot water and whisk until the all of the balls are separated. Set aside.
- Make the water jelly: In a small bowl, combine the agar and sugar.
- Add the water to a small pan, then add the agar mixture and stir to combine. Cook over high heat until boiling. Reduce the heat to low and cook for 2 minutes. Meanwhile, fill a large bowl with ice and cold water.
- Move the pan to the ice bath and chill for 3 minutes, stirring occasionally.
- Pour the agar mixture into the ice ball tray. Chill in the refrigerator for 10 minutes.
- Make the blue jelly: In a small pan, combine the water, blue Hawaii syrup, strawberry syrup, and agar and stir to combine. Cook over high heat until boiling. Reduce the heat to low and cook for 2 minutes.
- Move the pan to the ice bath and chill for 2 minutes, stirring occasionally.
- Using a skewer or toothpick, scratch the surface of the chilled water jelly. Pour the star mixture over the water jelly. Add the blue jelly and cover with the lid, and fridge for 30 minutes.
- Remove the raindrop cake from the tray.

Steps:
- Wash pigskin and cook for 5 minutes, add proper amount of cooking wine to remove fishy.
- The cooked meat skin is taken out and rinsed, and the white grease part is scraped off and the hair is removed.
- Remove clean.
- Remove the clean skin and cut into shreds for later use.
- Add ginger slices and a clove of star anise and bring to a boil.
- After boiling, skim off the foam on the surface so that the pigskin jelly will be very transparent. Cook for about 20 minutes to remove the ginger slices and star anise. When boiling for about 40 minutes, add salt and 1 tablespoon of light soy sauce.
- Put it in the fresh-keeping box when it is not hot after cooking.
- The fresh-keeping box is sealed and put in the refrigerator overnight to save space and avoid odor.

* I have also tried sifting confectionery sugar on a dry tea towel( not terry cloth) and turning the cake out on that. (Remove waxed paper carefully. Then try to roll the cake (on the long side) with the cloth as a buffer between each turn/layer. Let it rest for a minute or two then unroll and and let rest for a bit before you spread with jelly/jam . Re-roll. This seems to help keep the roll from tearing so easily.
