A staple dish throughout the Caribbean and Latin America, tostones are crisp, flattened plantains that are often served as appetizers and side dishes. Unlike sweet maduros, which are made with very ripe, almost black, yellow plantains, savory tostones are made with unripe green plantains. Tostones are fried twice: The first fry sears the cut sides of the plantains, establishing a base layer of color; the second fry ensures that every edge is golden and crunchy. Tostoneras, wooden tools designed to create the perfect tostone shape, come in handy here, but a flat-bottomed cup will do just fine in its place.

2 green (unripe) plantains (about 6 ounces each)
Neutral oil, such as vegetable or canola oil, for frying
Kosher salt, to taste

Steps:

  • Trim and discard the ends of the plantains. Use a paring knife to cut a slit along the length of the plantain to easily remove the peel, carefully avoiding cutting into the flesh. If the peel is too firm, use a spoon to lift the edges, then discard the peel. Slice the plantain crosswise into 1-inch rounds (about 8 pieces per plantain).
  • In a large skillet, heat about 1/8-inch vegetable oil over medium. When the oil shimmers, add the plantains, flat-side down. Fry until beginning to turn golden, about 1 minute per side.
  • While keeping the heat on, transfer plantains to a cutting board. Working with one piece at a time, use a tostonera or large flat-bottomed cup to gently press each plantain to about 1/2-inch thick. (If using a cup, keep it as centered as possible to flatten the plantains evenly.)
  • Working in batches if necessary to avoid crowding the pan, pan-fry the flattened plantains until golden-brown, 1 to 2 minutes per side.
  • Using a slotted spoon, transfer tostones to a paper towel-lined plate to drain. While hot, season with salt to taste. Serve immediately.

1 large green plantain (ends trimmed and peeled (6 oz after))
olive oil spray (I like Bertolli)
1 cup water
1 teaspoon kosher salt
3/4 teaspoon garlic powder

Steps:

  • With a sharp knife cut a slit along the length of the plantain skin, this will make it easier to peel. Cut the plantain into 1 inch pieces, 8 total.
  • In a small bowl combine the water with salt and garlic powder.
  • Preheat the air fryer to 400F.
  • When ready, spritz the plantain with olive oil and cook 6 minutes, you might have to do this in 2 batches.
  • Remove from the air fryer and while they are hot mash them with a tostonera or the bottom of a jar or measuring cup to flatten.
  • Dip them in the seasoned water and set aside.
  • Preheat the air fryer to 400F once again and cook, in batches 5 minutes on each side, spraying both sides of the plantains with olive oil.
  • When done, give them another spritz of oil and season with salt. Eat right away.

  • Make the brine: In a large bowl, whisk all ingredients together. Set aside. Make the lime sour cream: In a medium-size bowl, whisk the cream cheese and lime juice, to taste. Season with salt, and add the cilantro. Set aside. Make the chili salt: using a mortar and pestle, or a spice grinder, grind sugar, pepper flakes, salt, and garlic flakes. Set aside. Fill a large straight-sided skillet or pan with 2" of oil, and heat oil to 300°. (You want to keep the oil between 285° and 300° for this first stage of frying.) Slice the plantain in half crosswise, then run a sharp knife along the outsides of each half. (This is called scoring; it will help to make peeling the plantain easier.) Slice the plantain to make 2” thick circles. Fry the plantain circles for about 3 minutes, or until golden yellow. Transfer the plantains to a baking sheet or large plate. While still warm, use a cup or tortilla press that has been lightly oiled, and flatten the plantains into a disks. Once flattened, add the plantains to the brine so that they are fully immersed, and then immediately remove them. Raise the temperature of the oil to 350°. Add the flattened plantains to the hot oil for a second fry, and cook for about 2 to 3 minutes, or until they are golden. Transfer the plantain circles to a paper towel-lined baking sheet or large plate.  Transfer the plantain to a bowl, and season with the chili garlic salt. Serve with the lime sour cream.
