They are like polenta but sweeter. You can serve them with syrup or sprinkle with powdered sugar, but I like them plain." --CL Reader

Yield 9 servings (serving size: 1 cake)

Number Of Ingredients 9

1 cup water
1 cup 2% reduced-fat milk
½ cup sugar
2 tablespoons butter
¼ teaspoon salt
1?½ cups yellow cornmeal
1 tablespoon vanilla extract
3 large eggs, lightly beaten
Cooking spray

Steps:

  • Combine first 5 ingredients in a medium saucepan; bring to a boil. Gradually add cornmeal, stirring constantly with a whisk. Remove from heat; cool 10 minutes. Add vanilla and eggs, stirring well with a whisk.
  • Heat a nonstick skillet coated with cooking spray over medium-high heat. Spoon about 1/3 cup batter into pan. Cook 2 1/2 minutes on each side or until golden brown. Repeat procedure with remaining batter.

Yield 8 tortillas.

Number Of Ingredients 4

2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup water
3 tablespoons olive oil

Steps:

  • In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes., Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle., In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, about 1 minute on each side. Serve warm.
