VEGGIE CREAM CHEESE ROLL-UPS | JUST A PINCH RECIPES
What a simple appetizer recipe. We really liked the cool ranch flavor combined with the crunchy fresh peppers and olives. The hardest part of this recipe is letting the roll-ups chill in the fridge. Wrap them in a variety of flavored wraps to make them extra colorful and tasty. These are a great little finger food.

Steps:
- Beat cream cheese and dressing mix together, can use fork to mix.
- Add green onions and other veggies.
- Mix together.
- Spread cream cheese mixture evenly on flour tortillas.
- Roll up tortillas.
- Wrap tortillas in plastic wrap and chill tortillas for about 3 hours to set.
- Cut tortillas diagonally into 1/2 inch pieces.
- Display on platter. Can serve with salsa as a dip.

- In a small bowl, beat cream cheese and salad dressing mix until smooth. Stir in onions. Spread about 3 tablespoons over each tortilla; top each with two ham slices. , Roll up tightly and wrap in plastic. Refrigerate until firm. Unwrap and cut into 3/4-in. slices.

- In a medium bowl, combine avocado and lime juice and mash until only small chunks of avocado remain. Add chicken, bell pepper, red onion, Monterey Jack, cheddar, sour cream and chives and stir until evenly combined. Spread a thin layer of the chicken avocado mixture onto a large tortilla, leaving a small border around the edges. Roll the tortilla up tightly, then cut off the edges and slice into 1” rolls. Repeat with remaining ingredients. Serve cold or at room temperature.
