Savor the flavors of Mexico for breakfast wtih this Fiesta Corn Tortilla Quiche.

Yield Serves 4

Number Of Ingredients 8

1 pound hot ground pork sausage
5 6-inch corn tortillas
1 4-oz. can chopped green chiles, drained
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
6 6 eggs, beaten
½ cup whipping cream
½ cup small-curd cottage cheese

Steps:

  • Brown sausage in a skillet over medium heat; drain.
  • Meanwhile, arrange tortillas in a lightly greased 9" pie plate, overlapping on the bottom and extending 1/2 inch over the edge of plate.
  • Spoon sausage, chiles and cheeses into tortilla-lined pie plate. In a bowl, beat together remaining ingredients.
  • Pour egg mixture over sausage mixture. Bake, uncovered, at 375 degrees for 45 minutes, or until golden. Cut into wedges to serve.

1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
1/4 cup picante sauce
2 tablespoons taco seasoning
Dash garlic powder
1 can (4-1/2 ounces) chopped ripe olives, drained
1 can (4 ounces) chopped green chiles
1 cup finely shredded cheddar cheese
1/2 cup thinly sliced green onions
8 flour tortillas (10 inches)
Salsa

Steps:

  • In a small bowl, beat cream cheese, sour cream, picante sauce, taco seasoning and garlic powder until smooth. Stir in olives, chiles, cheese and onions. Spread about 1/2 cup on each tortilla. , Roll up jelly-roll style; wrap. Refrigerate for 2 hours or overnight. Slice into 1-in. pieces. Serve with salsa.
