24 uncooked refrigerated or dried cheese-filled spinach tortellini
1/2 cup reduced-fat Italian dressing
12 small whole mushrooms
12 small cherry tomatoes
12 bamboo skewers (6 inch) or rosemary sprigs
Lettuce leaves, if desired

Steps:

  • Cook and drain tortellini as directed on package. Cool 15 minutes.
  • Place dressing in shallow dish. Stir in tortellini, mushrooms and tomatoes. Cover; refrigerate 1 to 2 hours, stirring once to coat.
  • Drain tortellini mixture. On each skewer, thread tortellini, mushrooms and tomatoes alternately. (For rosemary sprigs, use your fingers to remove all but the top leaves; thread ingredients from the bottom.) Serve on bed of lettuce leaves.

3/4 cup zesty Italian dressing
1 (1/2-inch) slice deli ham, cubed
1 (1/2-inch) slice deli hard salami, cubed
1 red bell pepper, cut into 1-inch chunks
1 green bell pepper, cut into 1-inch chunks
1/4 (1/2-inch thick slice) pound Land O Lakes® Swiss Cheese cut into 1/2-inch cubes
1/4 (1/2-inch thick slice) pound Land O Lakes® Deli American cut into 1/2-inch cubes
36 toothpicks

Steps:

  • Cook tortellini according to package directions; drain.
  • Place Italian dressing, ham, salami, red and green pepper in large plastic food bag. Tightly seal bag. Turn bag over; place in 13x9-inch pan. Refrigerate, turning occasionally, 2-3 hours; drain.
  • Thread tortellini, ham, salami, peppers and cheese on toothpicks.
