This baked tomatoes recipe has been in our family for many years. My mother brought it with her when she came to the United States from Italy. When tomatoes are plentiful, this is a great way to serve them. —Mary Detzi, Wind Gap, Pennsylvania

1 garlic clove, minced
1 tablespoon olive oil
1/2 cup soft bread crumbs
2 large tomatoes
4 fresh basil leaves, chopped
1/8 teaspoon coarsely ground pepper

Steps:

  • In a small skillet, saute garlic in oil for 1 minute. Add bread crumbs; cook and stir until lightly browned. Remove from the heat., Cut tomatoes in half widthwise. Place cut side up in an 8-in. square baking dish. Sprinkle with basil and pepper; top with bread crumb mixture. Bake at 325° for 15-20 minutes or until tomatoes are slightly softened.

2 (14.5-ounce) cans diced tomatoes
2 tablespoons Land O Lakes® Butter
1 small (1/2 cup ) onion, finely chopped
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon ground pepper
1 pint (2 cups ) Land O Lakes® Half & Half
1 tablespoon sugar
1 teaspoon Worcestershire sauce
Chopped fresh basil leaves, if desired

Steps:

  • Place tomatoes in food processor bowl fitted with metal blade. Cover; process until finely chopped.
  • Melt butter in 3-quart saucepan until sizzling; add onion. Cook over medium heat 4-6 minutes or until onion is softened. Stir in flour, salt and pepper; continue cooking 1 minute or until smooth and bubbly.
  • Whisk in half & half. Continue cooking, whisking occasionally, 8-10 minutes or until mixture is thickened. Stir in all remaining ingredients; continue cooking 5-7 minutes or until heated through. (Do not boil.)
  • Pour soup into individual bowls. Top with fresh basil, if desired.

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling.
    In a large skillet over medium-high heat, saute onion in butter until tender. Add the tomatoes, salt, pepper and thyme. Cook over medium-high heat until liquid is almost evaporated, 10-15 minutes. Remove from the heat. , Sprinkle 1 cup cheese over crust. Cover with tomato mixture; sprinkle with remaining 1 cup cheese. In a small bowl, beat eggs until foamy. Beat in cream. Pour over filling. , Bake 10 minutes. Reduce heat to 325°. Bake until top begins to brown and a knife inserted in the center comes out clean, 35-40 minutes longer. Let stand 10 minutes before cutting.
