2 cups No-mato sauce * recipe below
1/4 cup blackstrap molasses
1/4 cup grade b pure maple syrup
1 teaspoon smoked paprika
2 tablespoons apple cider vinegar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Sea salt and fresh ground black pepper to taste

Steps:

  • "Place all of the ingredients into a medium saucepan over medium heat. When sauce begins to pop and bubble, reduce heat to medium-low and simmer for 5 minutes, stirring occasionally. Taste for seasonings, adding more if desired to suit your taste. Use as you normally would bbq sauce. Notes : If you prefer a spicier bbq sauce, just add your favorite hot sauce to taste. No-Mato Sauce - Tomato Free Pasta Sauce Makes about 6 cups of sauce. Use this no-mato sauce in all your recipes that call for tomato sauce. Ingredients 1 medium onion, chopped 4 cloves garlic, chopped 1 cup of carrots, sliced into coins 3 tablespoons fresh lemon juice 1 tablespoon balsamic vinegar Salt to taste Fresh ground black pepper to taste 1 - 15 oz can pumpkin puree 1/3 cup pure olive oil 1 - 8-ounce can beets Directions Saute the onion and garlic in a pot with 2 tablespoons of the olive oil until it starts to brown slightly. Add the carrots, lemon juice, balsamic vinegar, salt and pepper and add just enough water to barely cover the carrots. Bring to a boil, then lower the heat and simmer (covered) for 20-30 minutes until the carrots are very soft. (For the final sauce to be smooth, the carrots need to be very soft). Blend the carrot mixture, pumpkin puree and olive oil together until smooth, either in a blender or with an immersion blender. Add back to the pot. Puree the contents of the can of beets, liquid included, in a blender until very smooth Add the pureed beets to the pot with the carrot mixture and simmer for about five minutes, stirring well to combine. I portion my sauce out into 2 cup servings without any additional seasonings. and season the sauce further right before using, depending on the recipe I'm using it for. For pasta sauce, use your favorite Italian seasonings. Notes Keep in mind that this sauce will lose its red color the longer you cook it, so be sure to adjust the point at which you add the sauce to whatever you are cooking. This sauce also freezes great."

This recipe comes from the Interstitial Cystitis Network site at www.ic-network.com/bev/april00. We enjoy it just as much in spaghetti and enchiladas as tomato sauce. One batch makes the equivalent of 2 larges cans of tomato sauce (4 cups) so I use half the batch and freeze the other half in a freezer bag for next time. I find that I have to add about 25 percent more spice than I did when I used tomatoes.

6 carrots, peeled and diced
1 small beet, peeled and diced
1 large onion, diced
3 celery ribs, diced
1 bay leaf, whole
1 1/2 cups water

Steps:

  • Put everything in a covered pot, bring to a boil, reduce heat to simmer until veggies are soft.
  • Take out the bay leaf, blend well till smooth and use as you would tomato sauce, spicing appropriately for the dish you're using it in.
