This is actually pretty good. I need sauce one night and didn't have it so this is what I used. I added a little extra Vinegar, Oregano & Onion Powder as well as some Italian Seasoning.

Number Of Ingredients 8

2 (10 3/4 ounce) cans tomato soup
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon basil
1 tablespoon vinegar
1 lb hamburger
1 medium onion
1/2 cup water (up to 1 cup)

Steps:

  • Cook hamburger and onion til burger is done.
  • Add everything else but water - combine.
  • Add water until slightly thinner than you want sauce and simmer until desired thickness.
  • Serve.
  • Once you try this, adjust spices to suit your own taste.

Soup
2 (14-ounce) cans chicken broth
1 (28-ounce) can diced tomatoes
1 (24- to 26-ounce) jar tomato basil pasta sauce *
1/2 cup Land O Lakes® Half & Half
Topping
1 cup sour cream
2 tablespoons purchased pesto sauce

Steps:

  • Combine chicken broth, diced tomatoes and pasta sauce in 4-quart saucepan. Cook over high heat, stirring occasionally, 5-7 minutes or until mixture comes to a full boil.
  • Reduce heat to low; stir in half & half. Continue cooking 2-3 minutes or until heated through. (Do not boil.)
  • Combine sour cream and pesto in bowl. To serve, ladle soup into individual serving bowls; top each with 2 tablespoons sour cream mixture.

  • 1. Cut a small cross in the top of each tomato. Place in a bowl and cover with boiling water for about 2 minutes; drain and cool. Peel skin downward from the cross and discard. Roughly chop flesh. Heat oil in a large heavy-based pan. Add onion, garlic and red pepper; cook, stirring, for 10 minutes or until all ingredients are soft. Add tomatoes and cook another 10 minutes.

    2. Add the stock, tomato paste, salt, pepper and sugar. Cover and simmer for 15 minutes. Remove from the heat, add the basil. Allow to cool. Process in batches, in a food processor or blender, until smooth. Return the mixture to the pan and reheat gently.

    3. Cook the pasta separately in boiling salted water until tender; drain. Add to soup and heat through. Serve sprinkled with fresh basil leaves.
