This is a very easy pasta sauce, especially nice to make on busy nights. The basic recipe was adapted from the "Bon Appetit" November 2002 issue. The balsamic vinegar raises the sauce to a level above ordinary. It's a good sauce to play around with to make it your own.

2 tablespoons olive oil
1/2 cup onion, chopped
2 cloves garlic, finely chopped
2 (14 1/2 ounce) cans diced tomatoes
1 tablespoon balsamic vinegar
1/2 cup dry red wine
1 teaspoon dried basil

Steps:

  • Heat oil in heavy large saucepan over medium-high heat.
  • Add onion and garlic and saute until soft.
  • Stir in tomatoes, balsamic vinegar, wine, and basil.
  • Simmer 15 minutes.

This versatile sauce lends a bright flavor to so many meals and is so simple to make. Makes about 1 ¼ cups.

Steps:

  • Heat olive in a medium sauce over medium heat. Cook onion and garlic until softened, about 2 minutes. Add broth, tomato paste, vinegar and sugar. Bring to a boil. Reduce heat and simmer until thickened and reduce by half, about 15 minutes. If desired, pour into a blender and puree until smooth. Serve over steamed or roasted vegetables, grilled tofu or chicken, potatoes, rice and other grains.

  • "Generously drizzle a large frying pan with olive oil. Saute onions over medium low heat til soft but not brown, 5 to 10 minutes. Stir in garlic and basil and cook another minute or so. Add tomatoes, balsamic and pasta water. Cover and simmer 15 minutes. Taste and adjust as desired with salt and pepper. I served the pasta with sauce and toasted crusty bread.
