Whenever you’re cooking tofu, here’s one of our no-fail techniques: Draining the tofu, then squeezing out as much water as possible (without smashing it), is the key to the crispiest cubes.

Number Of Ingredients 8

1 12-oz. block firm tofu
¼ cup low-sodium soy sauce
3 Tbsp. pure maple syrup
3 Tbsp. unseasoned rice vinegar
½ tsp. crushed red pepper flakes
1 ½" piece ginger, very thinly sliced
½ cup neutral oil, such as canola or grapeseed
Kimchi, toasted sesame seeds, hijiki, daikon, sliced scallions, and steamed rice (for serving; optional)

Steps:

  • Drain tofu, then sandwich between several layers of kitchen towels to remove excess liquid. Cut into 9 cubes.
  • Whisk soy sauce, maple syrup, rice vinegar, red pepper flakes, and ginger in a small bowl.
  • Heat oil in a large nonstick skillet over medium-high. When oil is rippling across the surface, carefully add tofu so it doesn’t splash. Cook, undisturbed, until very crisp and dark brown underneath, 3–4 minutes. Carefully turn and repeat on opposite side. Holding tofu back with a spatula or slotted spoon, pour out oil into a small bowl. Return skillet to medium-high heat and add soy sauce mixture. Cook, reducing heat to medium so it doesn’t over-reduce or burn and basting tofu occasionally, until glaze is thick enough to coat a spoon, about 4 minutes.
  • Divide tofu among plates. Drizzle with glaze, then top with scallions. Serve with rice alongside.

Here we marinate tofu cubes in soy sauce and lime juice with a touch of toasted sesame oil, then roast them--perfect tofu every time.

2 (14 ounce) packages extra-firm, water-packed tofu, drained
? cup reduced-sodium soy sauce
? cup lime juice
6 tablespoons toasted sesame oil

Steps:

  • Pat tofu dry and cut into 1/2- to 3/4-inch cubes. Combine soy sauce, lime juice and oil in a medium bowl or large sealable plastic bag. Add the tofu; gently toss to combine. Marinate in the refrigerator for 1 hour or up to 4 hours, gently stirring once or twice.
  • Preheat oven to 450 degrees F.
  • Remove the tofu from the marinade with a slotted spoon (discard marinade). Spread out on 2 large baking sheets, making sure the pieces are not touching. Roast, gently turning halfway through, until golden brown, about 20 minutes.

This recipe is inspired by the many cold silken tofu dishes from East Asia, like Japanese hiyayakko and Chinese liangban tofu. This no-cook dish is a handy one to have up your sleeve, especially for warm evenings when the desire to cook is nonexistent. Silky soft tofu is draped in a punchy soy dressing, creating a lively dish with little effort. The tofu is ideally served cold, but 10 minutes at room temperature can take the edge off. Make it your own with other fresh herbs such as Thai basil, mint or shiso leaves, or add crunch with fried shallots or roasted peanuts. A salty, fermented element like kimchi, pickled radish or ja choi, also known as zha cai, a Sichuan pickled mustard root, would work well, too. One block of silken tofu is usually enough to feed two people, but for a more substantial meal, serve it with hot rice or noodles to create a pleasing contrast of temperatures.   • Carefully drain the liquid from the package of tofu, and gently tip the block onto a kitchen towel. (Try to keep the block in one piece, if possible, but don’t worry if it falls apart; it will still taste great.) Pat with another clean kitchen towel, removing as much liquid as possible. Transfer the blocks to one large plate or two smaller plates, and spoon the soy dressing over the top until the tofu is completely covered. Top with scallions and cilantro leaves, and eat on its own or with rice or noodles on the side.

The combination of flavors in this recipe—sweet late-season corn, soy, and butter—is not unusual. As Hiroko Shimbo writes in her book Hiroko’s American Kitchen, corn and butter are a common pair in Hokkaido, the northernmost island of Japan, where both are produced. Here the three come together, along with pan-fried tofu, scallions, mirin, and sesame oil, to make an ultra-flavorful, just-rich-enough vegetarian main. Serve it over rice, a chewy grain like farro or wheat berries, or arugula dressed with rice vinegar and more sesame oil. A crispy fried egg would also be welcome.

  • Set a few herbs aside for serving. Remove tofu mixture from heat and stir in remaining herbs. Sprinkle with gomasio and top with reserved scallions and herbs. Drizzle with sesame oil and more soy sauce if desired. Serve over rice.

This is another dish from my trip to Sarawak. On both nights of our stay in Kapit, we ate at a very rustic, family-run restaurant at the edge of town. The mother of the family took orders and served tables with the help of her two young daughters. One daughter had mastered the art of roller skating with plates of food and even bowls of soup! Among all the hustle and bustle of the restaurant a baby slept in a baby basket on top of a spare table, safely tucked away from customers while the grandmother busied herself cooking all of our food in the kitchen located right at the back of the building. None of us spoke Iban, the most common local tribal dialect and the mother spoke no English. Thankfully I was able to give her our order in basic Malay! We ordered this wonderfully comforting dish which came with finely sliced wood ear mushrooms. This restaurant also served phenomenal lard-fried thick egg noodles, very similar to the black charred hokkien mee you would find in KL. Simple stir-fried greens, a soup and stirfried butter prawns (shrimp) with egg floss rounded off our meals. You can make this dish vegetarian by substituting the pork with an equal amount of minced, rehydrated shiitake mushrooms and using mushroom stir-fry sauce instead of oyster sauce.
