- Heat oven to 400. Beat butter, shortening and 1 cup sugar in bowl until light and fluffy add eggs beat thoroughly. Add vanilla extract. In a seperate bowl stir together flour, cream of tartar, baking soda and salt. Gradually add the flour mixture to the butter mixture beating until blended and then stir in toffee bits.
- In a seperate bowl stir together 3 tbsp sugar and 1 tsp cinnamon.
- Shape cookies into 1 1/4 inch balls and roll in cinnamon and sugar mixture. Place on ungreased cookie sheets for 9-11 minutes. Cook until slightly brown around the edges. Cool overnight for the best flavour.

- Combine the butter and the sugar and beat on medium speed until well creamed together. Next, add the eggs and vanilla extract. Beat the eggs into the butter and sugar until egg is well mixed, scrape down the bowl as needed. In a separate bowl, combine flour, baking soda and cream of tartar. Slowly add into batter and beat on medium low speed until well combined and dough forms. As the dough starts to form, add 1 cup of the toffee and mix only until combined. Pre-scoop the dough into balls, and roll the dough in the remaining toffee, gently pressing some into the top of the cookie. Refrigerate the dough for a minimum of 30-45 minutes. Preheat the oven to 350°F. Allow the cookie to rest 10 minutes at room temperature before baking. In a small bowl, combined cinnamon and sugar and stir to combine. Roll each cookie dough ball in the cinnamon sugar mixture. Place about 2 inches apart. Bake at 350°F 10-12 minutes. They will be slightly under baked in the middle. Allow the cookies to cool on the baking sheet for several minutes and then transfer to a wire rack to cool completely. Store in an airtight container.

- Preheat oven to 350°. Line four large baking sheets with parchment paper. In a small bowl, combine ¼ cup of the Domino Golden Sugar and 2 teaspoons of the cinnamon. Whisk together flour, cream of tartar, baking soda, 1/2 teaspoon cinnamon, and salt in a medium bowl until evenly combined. In a separate large bowl, combine butter and 1 ½ cups of the golden sugar. Beat until light and fluffy. Add eggs and vanilla and beat until well combined. Add dry ingredients and mix until just combined. Using a medium cookie scoop, portion dough into 1 tablespoon balls. Flatten two balls, with the bottom of a glass, into disks, then place a caramel in the center of one disk and top with second disk (making a sandwich stack). Using your fingers, pinch around the edges to seal, then gently roll into a ball. Roll ball in cinnamon sugar and place on prepared baking sheet. Repeat with remaining dough. Arrange cookies 2 inches apart on prepared baking sheets. Bake until cookies begin to crack, 18 to 20 minutes. Let cool on trays 5 minutes, then transfer to a wire rack and let cool completely.
