3 -4 tablespoons dried onion flakes
1 (8 ounce) package cream cheese
1/3 cup plain yogurt
1/3 cup mayonnaise
2 small green onions, and tops chopped
2 garlic cloves, minced
1/4 teaspoon crushed beef bouillon cube
2 -3 tablespoons nonfat milk
1/2-1 teaspoon lemon juice
2 -3 drops hot pepper sauce
salt
white pepper, to taste

Steps:

  • Cook onion flakes in small skillet over medium to medium-low heat until toasted, 3 to 4 minutes, stirring frequently.
  • Cool.
  • Mix cream cheese, yogurt, mayonnaise, green onions, garlic, and bouillon in medium bowl until smooth, adding enough milk to make desired dipping consistency.
  • Season to taste with lemon juice, pepper sauce, salt, and white pepper.

5 red onions
1 knob of unsalted butter
olive oil
4 cloves of garlic
½ a bunch of thyme (10g)
1 tablespoon of runny honey
2 tablespoons of red wine vinegar

Steps:

  • This recipe works great as a stand-alone dish, but also as a component in Jamie’s Steak night from Together – see the full collection of menus here. ON THE DAY Preheat the oven to 200°C/400°F/gas 6. Peel the onions, cut into 1cm-thick rounds and place in a large roasting tray. Dot over the butter and drizzle with 1 tablespoon of olive oil, then peel, slice and scatter in the garlic, as well as the sprigs of thyme. Add a pinch of sea salt and black pepper, toss together, then arrange in a single layer. Roast for 30 minutes on the middle shelf, giving the tray a jiggle halfway through. Remove, drizzle with the honey and red wine vinegar, mix well and shake flat. Cover with tin foil until needed. TO SERVE When the steak is resting, return the onions to the oven, covered, for 15 minutes, or until sticky and sweet. Before serving, season to perfection, tasting and tweaking.

This recipe is one I created by combining my Roasted French Onion Soup and elements of a mushroom soup found on 'Zaar; the mushrooms are made rich and succulent by roasting them with garlic while the onions are roasting. I make it using a combination of button, cremini, portabella, and shitake mushrooms - I love how the portabella mushrooms add depth and enhance the mushroom flavour. It can be served as is, or done up like french onion soup, with toasted crusty bread and melted old cheddar on top. If you're not a vegetarian, you could use beef broth instead of the dark vegetable stock.
