This is my Christmas take on the undeniably decadent yet simple, classic Italian dessert of tiramisù. Jools prefers this version, as it doesn’t contain raw eggs, and I’ve lightened it up by pairing mascarpone with glorious ricotta cheese.

Number Of Ingredients 10

200 ml double cream
100 g quality dark chocolate (70%) plus extra to serve
100 g sponge fingers
150 ml good hot strong sweetened coffee
50 ml Vin Santo or sweet sherry
500 g ricotta cheese
250 g mascarpone cheese
1 teaspoon vanilla bean paste
3 tablespoons runny honey
1 orange or clementine

Steps:

    1. To make a ganache, pour the cream into a pan and gently bring to a simmer over a medium heat.
    2. Add a pinch of sea salt, snap in the chocolate and stir until melted, thickened and smooth, then remove from the heat and leave to one side.
    3. Line a dish (20cm x 30cm) with the sponge fingers (or Genoese sponge, if you’ve made it), carefully pour over the hot sweetened coffee and drizzle over the Vin Santo or sweet sherry.
    4. Spread the chocolate ganache over the top in an even layer.
    5. In a food processor, blitz the ricotta, mascarpone, vanilla bean paste and honey until super-smooth. Spoon this creamy mixture evenly on top of your chocolate layer.
    6. Place in the fridge for at least 2 hours, to set. Serve with a good grating or shaving of chocolate and a fine grating of orange or clementine zest. Heaven.

Back when Mike was a student, he stumbled across a posh Italian café, where he ordered a beautiful tiramisù spiked with limoncello and it absolutely blew his mind. It was his first taste of limoncello, the zingy Italian favourite, but one he’s never forgotten. Months later he tried to find the café again, but sadly it had closed down. That deliciously tasty dessert is something he’s always wanted to recreate, but had no idea where to start, until now…

400 g caster sugar
3 unwaxed lemons
4 large free-range eggs
500 g mascarpone cheese
4 tablespoons limoncello plus extra for drizzling
200 g sponge fingers
4 sprigs of fresh mint

Steps:

    1. Place 250g of sugar and 250ml of water into a small pan, then place over a medium-high heat.
    2. Using a speed-peeler, peel the zest of 2 lemons into strips, finely slice into matchsticks, then add to the pan and squeeze in the juice. Simmer gently for 10 to 12 minutes, or until you have a light syrup consistency.
    3. Remove from the heat and allow to cool, carefully transferring the lemon peel to a plate.
    4. Separate the eggs, placing the yolks in one bowl and the whites in another.
    5. Whisk the egg yolks with 150g of sugar until pale and fluffy, then add the mascarpone and whisk again until smooth and creamy.
    6. Finely grate in the zest from the remaining lemon, pour in the limoncello, then stir through.
    7. Whisk the egg whites with a pinch of sea salt until they form stiff peaks, then gently fold through the yolk mixture keeping as much air in as possible.
    8. To assemble the tiramisu, spread a third of the cream over the base of a 18cm x 24cm dish. Dipping the fingers in the lemon syrup as you go, layer half the sponge fingers into the dish in a single layer. Drizzle generously with limoncello, to taste, and repeat once more, finishing with a layer cream on top.
    9. Place in the fridge to chill for at least 4 hours, preferably overnight, then scatter over the reserved candied lemon peel, and pick over the mint leaves.

A creamy dessert of espresso-soaked ladyfingers surrounded by lightly sweetened whipped cream and a rich mascarpone, tiramisù relies heavily on the quality of its ingredients. If you don’t have a barista setup at home, pick up the espresso at a local coffee shop, or use strongly brewed coffee. As for the ladyfingers, make your own or buy them, but keep in mind that store-bought varieties can range from soft and spongy (like angel food cake) to hard and crunchy (like biscotti). Both kinds will work here, but if you're using the softer variety, stick to a light brushing of espresso, instead of a deep dip.

  • Preheat oven to 325º and grease an 8" or 9" springform pan with cooking spray. Make crust: In a large bowl, mix together graham cracker crumbs, melted butter, sugar, and cocoa powder. Press mixture into prepared pan. Make cheesecake: In a large bowl using a hand mixer, beat cream cheese and sugar until completely smooth and fluffy. Add cornstarch, then add eggs. Add rum, coffee and vanilla. Pour 1/2 batter into springform pan, add a layer of ladyfingers, and top with the rest of the cheesecake mixture and bake until center of cheesecake is only slightly jiggly, 1 hour 20 minutes to 1 hour 30 minutes. Turn oven of and let cheesecake cool in oven, 1 hour, then refrigerate until completely cool, 4 hours or up to overnight. (If you'd like to use a water bath, tightly wrap outside of springform pan with two layers of aluminum foil. Transfer to a deep roasting pan and pour in enough boiling water to reach halfway up the cheesecake pan. Bake as directed). When ready to serve, dust with cocoa powder, pipe dollops of whipped topping, and sprinkle with chocolate shavings. Serve.
