3 Regal Springs Tilapia fillets
Cooking spray
1 tsp paprika
1 tsp chili powder
½ tsp cumin
Cayenne pepper (to taste)
¼ tsp sea salt
¼ tsp pepper
2 tbsp olive oil
1 tbsp butter
5 –7 small red potatoes (cut into 1/8ths)
½ red bell pepper (diced)
½ poblano pepper (diced)
½ yellow onion (diced)
2 garlic cloves (minced)
Salt and pepper (to taste)
1 tbsp butter
6 eggs
¼ cup Mexican cheese
Salt and pepper (to taste)
3 large flour tortillas
½ avocado (sliced)
Salsa (to taste)
Greek yogurt (to taste)

Steps:

  • Mix the paprika, chili powder, cumin, cayenne pepper, salt and pepper together in a small bowl. Spray your Tilapia fillets with cooking spray and sprinkle your spice mix over the fish.
  • Heat a separate large non-stick skillet over medium heat. Add your Tilapia fillets and cook for about 5–7 minutes, flipping halfway.

I found that these are a great way to get a bit more fish into our diet, plus they taste great. And by not frying the fish, these are pretty healthy, depending on your toppings. I love topping them with a mango or pineapple salsa and homemade coleslaw.

5 tilapia fillets
1 tablespoon olive oil
1 lime, juice of
1 tablespoon cumin
2 tablespoons southwest seasoning
salt
8 corn tortillas (small size) or 8 flour tortillas (small size)
cooking spray
sour cream (optional)
guacamole (optional)
minced onion (optional)
shredded cheese (optional)
fresh salsa (optional)
lime slice (optional)

Steps:

  • In a nonstick pan, heat over medium high heat the oil and then add the tilapia.
  • Season with half the lime juice, salt, cumin and southwest seasoning.
  • Once that side is cooked, flip and season, cooking till golden.
  • Heat a small pan over medium heat and then spray with cooking spray. Add tortilla, cooking and heating both sides.
  • Fill tortilla with a portion of fish and then top with desired toppings.

  • 1. Heat oven to 400ºF. On a baking sheet lined with parchment paper, place fish fillets. Sprinkle seasonings and salt on top of the filets, rubbing seasonings in to cover the top of the fish. 2. Bake fish for 13 minutes, or until cooked through, but not overcooked. During the last 5 minutes of baking, wrap the soft taco shells in parchment paper then aluminum foil, and place in on the baking sheet to warm up with the fish. 3.
