In traditional ceviche, the fish is "cooked" only by the acidity of the citrus juice in which it marinates; in this recipe, we liked the added flavor and texture given by cooking the fish first. Serve on lettuce leaves with baked tortilla chips or in warm flour tortillas as fish tacos.

Cooking spray
1 pound tilapia fillets
½ cup chopped red bell pepper (about 1/4 of 1 large)
½ cup chopped tomato (about 1 small)
? cup finely chopped red onion (about 1/2 of 1 small)
? cup chopped fresh cilantro
¼ cup fresh lime juice
1 ripe avocado, chopped (about 1/2 cup)
1 garlic clove, minced
½ teaspoon salt

Steps:

  • Heat a large nonstick skillet over medium-high heat; coat pan with cooking spray. Add fish; cook 2 to 3 minutes on each side or until fish flakes easily when tested with a fork. Flake fish into bite-sized pieces.
  • Combine fish and remaining ingredients in a large bowl; chill at least 1 hour before serving.

1 pound tilapia fillets (cubed)
15 juice of limes ((1 cup))
½ cup tomatoes (seeded and finely chopped )
1 large red onion (finely sliced)
½ cup cucumber (peeled, seeded and finely diced)
¼ cup cilantro (finely chopped)
¼ cup Jalapeno pepper ((or habanero pepper))
salt and pepper seasoning to taste

Steps:

  • Chop the tilapia filets into small pieces, place them into a large bowl and cover them with lime juice. The lime juice should be enough to cover the fish, but not cause them to float in a pool of juice.
  • Mix the chopped tomato, red onion, cucumber and cilantro into the bowl. Add salt and pepper to taste.
  • Now, it's just a waiting game! Allow the tilapia to marinate in the lime juice for at least an hour. The key is to find the right amount of time for marination as anything less would mean your tilapia is left raw, and anything more would cause your tilapia to overcook. Taste for a check of the salt and pepper amount before serving and adjust if necessary.
