This recipe was created when we felt like having spicy, Oriental tasting food. It's delicious, and uses bold ingredients such as peanut butter, fresh ginger and sesame oil. Try serving over rice.

1 cup soy sauce
8 cloves garlic, minced
1 tablespoon minced fresh ginger root
2 tablespoons hot pepper sauce
2 pounds skinless chicken thighs
1 tablespoon sesame oil
1 tablespoon brown sugar
1 onion, sliced
½ cup water
4 tablespoons crunchy peanut butter
2 tablespoons green onions, chopped

Steps:

  • In a large bowl, combine the soy sauce, garlic, ginger and hot pepper sauce. Mix well and place chicken in the bowl, turning to coat evenly. Cover and marinate in the refrigerator for at least one hour.
  • Heat the sesame oil in a Dutch oven over medium high heat. Add the brown sugar, stirring until dissolved. Add the onion and saute for 5 minutes. Add the chicken parts and saute for 5 minutes, turning to brown evenly. Pour in marinade, add the water and bring to a boil.
  • Reduce heat to low and simmer for 15 to 20 minutes. Add the peanut butter, stirring well, and simmer for 10 more minutes. Transfer chicken to a serving platter, pour sauce over, and garnish with the chives.

1 jar (14 ounces) pasta sauce
½ cup Hidden Valley® Original Ranch® Dressing
1 package (14.5 ounces) pasta
4 ounces chicken
1 cup peas
½ cup feta cheese
½ cup bread crumbs

Steps:

  • Preheat oven to 350°F. Grease a 9x13-inch baking dish with oil.
  • In a large bowl, mix together the sauce and dressing. In another large bowl, toss the cooked pasta with half of the sauce mixture until well-coated; set aside the remaining sauce mixture.
  • In the prepared baking dish, layer half the pasta, then half the chicken, half the peas, half the corn, and repeat. Evenly sprinkle the top with feta cheese.
  • Drizzle the remaining sauce mixture over the casserole, top with breadcrumbs, and bake for 30 minutes or until the top is golden and bubbly. Serve immediately.
