Robyn’s Guacamole Recipe – RobynWright.com image

This is one of the recipes that friends ask me to make most often, my homemade guacamole. It is so much better than any store bought guacamole you will ever have.

Provided by Robyn Wright

Categories     Appetizer

Prep Time 30 minutes

Yield 2

Number Of Ingredients 7

2 each avocado
2-3 each lime
3 cloves garlic
1/4 cup chopped cilantro
1/4 cup chopped onion
1 each jalapeno
salt and pepper to taste

Steps:

  • Slice avocado in half and remove seed. Using a knife make cuts vertically and horizontally. Use a large spoon to scoop out the cut avocado into a large bowl.
  • Add juice from 2 limes into the bowl and mix well to coat the avocado
  • Remove the seeds and stem from the jalapeno. Taste a bit of it to determine how much heat it has or not. Start with at least half of the jalapeno chopped finely to add to the avocado mix. You can add more if you would like it be spicier.
  • Finely chop about half of a medium onion. I prefer red onions but sometimes use white also. Add to avocado mixture.
  • Finely chop cilantro. I use about 1/4 cup, use more or less depending on your preference. It really is required to have some in this recipe though.
  • Season with sea salt and fresh ground black pepper.
  • Using a fork mix all ingredients together and mash the pieces of avocado against the side of the bowl as you do.
  • Taste. Adjust by adding more lime juice, cilantro, jalapeno, onion, salt and/or pepper to your liking. Mix well again.
  • You can eat right away or cover bowl well and let chill in refrigerator for a couple of hours for the flavors to blend together more. Serve with tortilla chips.
