ROLL AND CUT COOKIES RECIPE - FOOD NETWORK

Roll and Cut Cookies Recipe - Food Network image

Provided by Food Network

Categories     dessert

Total Time 35 minutes

Prep Time 25 minutes

Cook Time 10 minutes

Yield 4 dozen cookies (standard size)

Number Of Ingredients 8

2 cups salted butter
2 cups granulated sugar
2 large eggs
4 tablespoons whipping cream (or whole milk)
4 teaspoons pure vanilla extract
2 teaspoons almond extract
6 cups unsifted all-purpose flour
1 tablespoon baking powder

Steps:

  • Combine butter and sugar. Do not take this mixture to a "light cream." Think "incorporate" ? not "cream." Just make sure the mixture is smooth ? no butter lumps.
  • In a small bowl mix egg, milk/cream, and extracts. Add this mixture all at once to the butter and sugar. Mix just until the egg is broken. The mixture will "curdle" but that's not a problem.
  • In another small bowl, mix the flour and baking powder. Add these dry ingredients to the liquid ingredients in the mixing bowl. Process to form dough.
  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper. It's just that simple! The beauty of this dough is that it does not need to chill before using it. Simply flour a work surface. Knead the dough a few times to smooth it out and with a rolling pin, roll dough. Cut into desired shapes. The dough scraps can be used several times. Bake for 8 to 10 minutes, or until golden brown. Cool on a wire rack.

EASY LEMON THUMBPRINT COOKIES RECIPE - BETTYCROCKE…

Easy Lemon Thumbprint Cookies Recipe - BettyCrocke… image

These buttery sugar cookies filled with sweet-tart lemon curd were inspired by our love of lemon, our appreciation for the classic thumbprint and the ever-present need for easy cookies. With all that in mind, the Betty Crocker™ Test Kitchens came up with this recipe full of time-saving hacks. It starts with an extra-citrusy dough made by adding lemon zest to Betty Crocker™ sugar cookie mix. The dough then gets rolled into balls, dipped in coarse sparking sugar and indented with the end of a wooden spoon, making a perfect divot for adding the lemon curd. From dough to oven, this recipe takes 25 minutes, so it’s easy enough to prep while dinner’s in the oven. When it’s time to fill your cookies, a pastry bag fashioned from a resealable plastic bag and store-bought lemon curd makes it extra efficient. Before you know it, you’ll have 50 bright and beautiful cookies perfect for just about any occasion.

Provided by Betty Crocker Kitchens

Total Time 1 hours 10 minutes

Prep Time 25 minutes

Yield 50

Number Of Ingredients 5

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
Flour, butter and egg called for on cookie mix pouch for cutout cookies
2 teaspoons grated lemon zest
2 tablespoons coarse sparkling white sugar
1/3 cup lemon curd

Steps:

  • Heat oven to 375°F. In medium bowl, mix cookie mix, flour, melted butter, egg and lemon zest with spoon until soft dough forms.
  • Shape into 50 (1-inch) balls. In small bowl, place sparkling sugar. Dip top of each ball in sugar. Place balls, sugared side up, 1 inch apart on ungreased cookie sheets.
  • Bake 7 to 9 minutes or until edges are set. Cool 2 minutes on cookie sheets. Using end of wooden spoon, make 1/2-inch circle indentation in center of each cookie. Remove from cookie sheets to cooling rack. Cool completely, about 20 minutes.
  • When ready to serve, spoon lemon curd into small resealable freezer bag; partially seal bag. Cut off small corner of bag. Insert cut corner of bag into indentation in each cookie. Squeeze bag to fill opening, about 1/4 teaspoon per cookie. Store covered in refrigerator.

MY CHRISTMAS CAKE | JAMIE OLIVER RECIPES
If I’m completely honest, I’ve never been a massive Christmas cake fan, but my mum insisted I put one in the book, so I spent months developing this, which I do like! It’s lighter than most – have fun decorating it, like I did with Buddy.

    1. Preheat the oven to 150º/300ºF/gas 2. Grease a 20cm square cake tin with butter and line the base and sides with greaseproof paper, lining the sides high.
    2. Tear the stones out of the dates and prunes, then place all the dried fruit in a food processor and pulse until roughly chopped. Decant the mixture into a large bowl, coarsely grate in the apple, finely grate in the clementine zest and squeeze in the juice. Pour in the stout, mix well and leave aside to soak for a few minutes.
    3. Meanwhile, blitz the butter and sugar together in the processor until pale, smooth and fluffy. With the processor still running, one-by-one crack in the eggs, then pour in the milk in a steady stream, blitzing until smooth. Scrape this mixture into the bowl of fruit and fold together with a spatula. Sift in the flour, baking powder, cocoa and spices, then fold together again. Transfer to your prepared tin and bake for around 2 hours, or until cooked through and an inserted skewer comes out clean – if it needs a little longer, simply cover the top with greaseproof paper to prevent it from catching. Leave to cool for 30 minutes in the tin, then transfer to a wire rack to cool completely.
    4. Now the fun bit, the decoration. To make royal icing, whisk 3 large free-range egg whites in a large bowl until fluffy. Sieve 700g of icing sugar separately, then, a spoonful at a time, fold it into the egg whites. Once combined, stir in the juice of ½ a lemon and ½ a teaspoon of glycerine. Beat until it forms stiff peaks, then use it to decorate the cake.

PRAWN LINGUINE | PASTA RECIPES | JAMIE OLIVER
Sweet prawns, freshly made pasta, rich tomatoes, lemony rocket and a kick of chilli – this is proper comfort food!
From jamieoliver.com
Total Time 1 hours
Cuisine italian
Calories 500 calories per serving
    1. Peel the prawns, reserving all the heads and shells. Run a knife down the back and pull out the veins. Keep 4 prawns whole, running your knife down those ones again to butterfly them. Chop the rest of the prawns into small chunks to help distribute that sweet taste throughout the dish.
    2. Put the saffron into a little bowl with a thimble of boiling water.
    3. Place the prawn heads and shells in a large pan on a medium heat with a lug of olive oil and fry while you peel and finely chop the onion, then add it to the pan. Cook until the onion starts to soften, stirring occasionally.
    4. Add the saffron with its soaking water and the anchovies. Turn the heat up, add the wine and cook it away, then add the tinned tomatoes, 1 tin’s worth of water and a pinch of sea salt and black pepper. Bring to the boil, then simmer for 12 minutes.
    5. Leave the sauce to cool a little, then, in small batches, blitz in a blender until smooth, pass through a coarse sieve and season to taste.
    6. Put a large pan of salted water on to boil for the pasta. Peel and finely slice the garlic, quarter the cherry tomatoes and finely slice the chilli. Trim and finely slice the fennel, preferably on a mandolin (use the guard!).
    7. You can make this with the fresh or dried pasta – if you're using fresh, cut the sheets into linguine.
    8. Now it’s time to focus. Great pasta is all about timing and confidence – the sauce takes 4 minutes, so if using dried pasta, get that on first and start the sauce after 8 minutes; if using the fresh, cook it halfway through the sauce process – I don’t want you to overcook the prawns or pasta.
    9. Place a large pan on a high heat and, once hot, add a good lug of olive oil, quickly followed by the garlic and chilli. After 30 seconds, toss in the whole prawns, then after another 6 seconds add the chopped prawns, cherry tomatoes and fennel, and toss again. Pour over the sauce and bring to a simmer.
    10. At this point, drain your cooked pasta and place it on top of the sauce. Toss again, quickly check the seasoning and divide between four bowls, followed by any leftover prawns and sauce. Top each portion with a clump of rocket, add a squeeze of lemon juice and drizzle with extra virgin olive oil. Eat it, and be proud of yourself.

  • *Cake recipe adapted from Better Homes and Gardens*Icing recipe adapted from SavorySweetLife.com(Note: You can use absolutely any cake you want, just as long as trinkets are added!)CAKEPreheat oven to 375 degrees. Thoroughly grease/flour a 9 x 13 baking pan (or spray with baking spray.)In a mixer fitted with the whisk attachment, beat butter until it's soft and fluffy, about 30 seconds. Add the sugar in batches, about a fourth at a time. Scrape the sides of the bowl, then mix again until totally combined and fluffy, about 2 minutes. Add eggs one at a time, beating for 20 seconds on medium after each addition. Add vanilla and mix until combined. In a separate bowl, stir together flour, baking powder, and salt. Alternate adding the flour mixture with the milk with the mixer on medium-low until all the ingredients have been incorporated. Scrape the sides of the bowl and turn the mixer on high for ten seconds. Remove bowl from mixer stand and fold in trinkets so that they're evenly distributed. (Note that you can also tightly wrap trinkets in small pieces of aluminum foil if you prefer.) Use an offset spatula to even out the surface, then bake for 22 to 25 minutes, until cake is just set and a toothpick comes out clean. Allow cake to cool completely before icing.ICINGIn a mixer fitted with the paddle attachment, whip the butter until totally soft and smooth. Sift together the powdered sugar, cocoa, and salt, then add gradually to the mixer, scraping the sides as you go. (When combined, mixture will be very thick/crumbly.) Drizzle in cream and whip on high until smooth, scraping the sides as you go. Ice the cooled cake in the pan.Cut 12 to 16 slices of cake with a serrated knife, being careful not to tear out any trinkets along the way (most of them settle close to the bottom.)***Be sure to tell everyone that there are trinkets in the cake beforehand so they can watch for them! Each trinket means different things. Here's the tradition from my church:Dime: WealthRing: Church's blessingsThimble: Increased industryButton: Increased spiritual knowledgeBaby: Will know Jesus betterShoe: Will walk in the ways of the LordBean: King of Epiphany!
