Beefy Sour Cream Noodle Bake Recipe - The Pioneer Woman image

This sour cream noodle bake with egg noodles and ground chuck is delicious weeknight grub—and it can easily be made ahead of time.

Number Of Ingredients 9

1 1/4 lb.

ground chuck

1

can 15-ounces tomato sauce

1/2 tsp.

salt

Freshly ground black pepper

8 oz.

egg noodles

1/2 c.

sour cream

1 1/4 c.

small curd cottage cheese

1/2 c.

sliced green onions (less to taste)

1 c.

grated sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Brown ground chuck in a large skillet. Drain fat, then add tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, then simmer while you prepare the other ingredients.  Cook egg noodles until al dente. Drain and set aside.  In a medium bowl, combine sour cream and cottage cheese. Add plenty of freshly ground black pepper. Add to noodles and stir. Add green onions and stir.  To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, then sprinkle on half the grated cheddar. Repeat with noodles, meat, then a final layer of cheese. Bake for 20 minutes, or until all cheese is melted.  Serve with crusty French bread.

  • Use a sharp knife to slice both chicken breasts in half through the middle, so that you wind up with four thinner chicken cutlets. Season with salt and pepper.Heat a heavy skillet over medium to medium-high heat and add the butter and olive oil. Cook the chicken until it has nice color on the outside and is cooked through, about 2 1/2 minutes per side. Remove the chicken to a plate. Pour the marinara sauce into the pan and stir to heat through. Nestle the chicken cutlets in the sauce, the arrange pepperoni slices over the top of each one. Lay a mozzarella slice on top, then cover the skillet with a lid and cook for 2 to 3 minutes, until the cheese is melted. Sprinkle with parsley. Serve immediately with a side salad, or over pasta, with marinara spooned over the top.(Note: I only used 2 chicken cutlets for this photo, but the recipe calls for 4.)
