This is the best gosh darn soup! MIL makes it every year and I finagled the recipe from her..I know it sounds weird but its heavenly. She got the recipe out of a store flyer.

Ingredients

2 celery ribs, sliced
1 carrot, sliced
1 cup chopped onion
1/4 cup butter
3 (14 ounce) cans chicken broth
2 cups water
1 teaspoon garlic powder
1/2 teaspoon thyme
3 cups cooked turkey
1 (12 ounce) jar turkey gravy
1/4 cup left over prepared stuffing
1/4 cup left over mashed potatoes
2 tablespoons cranberry sauce (the jellied kind)
1 cup pearl barley

Steps:

Sauté first 4 ingredients for 2 minutes then cover and cook for 2 more minutes.
Add next 4 ingredients and cover and cook on low for 15 minutes.
Add remaining ingredients and cook until leftovers dissolve and barley is plump.

This easy and delicious turkey soup is made using leftovers from Thanksgiving or Christmas dinner. I usually make cornbread muffins to serve with it.

Ingredients

1 picked over turkey carcass
1?½ cups leftover stuffing
2 celery stalks, chopped
2 carrots, peeled and sliced
1 onion, peeled and diced
2 bay leaves
1 tablespoon poultry seasoning
1 teaspoon ground sage
2?½ quarts chicken broth
garlic salt to taste
ground black pepper, to taste
2 cups (uncooked) regular long-grain white rice
1 (16 ounce) package frozen green peas

Steps:

Place the turkey carcass in a large, deep pot, and add the stuffing, celery, carrots, onion, bay leaves, poultry seasoning, sage, and chicken broth. Pour in additional water if needed to cover. Bring to a boil over medium-high heat; reduce heat to medium, and simmer for about 1 hour, skimming off any foam. Remove the carcass and any bones. Pick any meat off and return to the pot, discarding bones and skin.
Season to taste with garlic salt and pepper. Stir in the rice and return to a boil over medium-high heat. Lower heat to medium, and simmer 15 minutes. Stir in the peas, and continue to simmer until rice is tender, about 10 minutes more. Adjust seasonings to taste.

Procedure. Put the broth and carcass in an 8-quart pot over low heat and bring to a simmer. Cover and cook for 1 hour. Remove the carcass. Add the turkey meat, vegetables, rice, thyme, and Old Bay to the pot and simmer for another 20 minutes. Season with salt and pepper.
