Number Of Ingredients 15

3 tablespoons vegetable oil or 3 tablespoons peanut oil
1 piece gingerroot, peeled and finely chopped
4 garlic cloves, finely chopped
3/4 cup broccoli floret
1/2 cup snow peas
1 carrot, peeled and cut in match sticks
1 green pepper, deseeded and cut in strips
1 red pepper, deseeded and cut in strips
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
4 scallions, trimmed and shredded (to garnish)
1/2 teaspoon white pepper

Steps:

  • Heat wok, add oil when hot, add the garlic and giger and stirfry for one minute.
  • Add broccoli and stir-fry for 1 minute, then add snow peas, carrots and the green and red peppers.
  • Stir-fry for an additional 3-4 minutes or until tender but still crisp.
  • Blend the soy sauce, hoisin sauce and sugar in a small bowl. Stir well, season to taste with salt and pepper and pour into the wok, stirring well to distribute.
  • Transfer to a serving dish.
  • Garnish with scallions.

2 medium zucchini, quartered and chopped
2 cups sliced mushrooms
1/2 cup slivered carrot
1/2 cup chopped fresh basil
1/4 cup chopped cilantro
2 tablespoons soy sauce
2 tablespoons fish sauce
1/2 fresh lime, juice of
1/2 tablespoon minced ginger
1/2 tablespoon minced garlic
2 teaspoons sugar
1/2-2 tablespoon sambal oelek chili paste (to taste)
1 tablespoon cornstarch (optional)
1 1/2 tablespoons vegetable oil

Steps:

  • In a small bowl, combine the fish sauce, soy sauce, lime juice, ginger, garlic, sugar, and sambal oelek for the sauce; set aside.
  • The sauce in this is thin from the veggies; if you like a thicker sauce, add 1 tbsp.
  • cornstarch to your sauce, but it won't affect the flavor either way.
  • Heat oil in wok or large skillet over medium-high heat.
  • Add zucchini, mushrooms, and carrots to pan; stir-fry for 3 minutes.
  • Add sauce in bowl to pan; stir to mix well, and continue cooking for 5 minutes, until vegetables are crisp-tender.
  • Stir in herbs and serve.

  • To Prep In a small bowl, combine sauce ingredients. Set aside. To Cook In a wok, heat 1 tbsp of vegetable oil over medium-high heat. Fry tofu for 2 mins each side, until crisp. Set aside. Cook green beans for 2-3 mins. Set aside. In the hot wok, add remaining oil with eggplant and salt. Reduce heat to medium and stir-fry for 6 mins. Add ginger, onion, garlic and half of red chillies. Increase heat slightly and cook for 2-3 mins. Toss through half of Thai basil leaves and sauce mixture. Add crispy tofu and green beans until warmed up. Add a squeeze of fresh lime juice. Serve with remaining basil leaves, red chillies and steamed jasmine rice.
