Ginger Chicken Stir-Fry Recipe: How to Make It image

We like hot spicy foods, so we always add the highest amount of cayenne pepper called for here. No matter how much you use, this dish has just the right amount of pizzazz!

4 boneless skinless chicken breast halves, cut into bite-size pieces
2 tablespoons vegetable oil
2 cups each broccoli florets, cauliflowerets and carrot pieces
1 cup chopped onion
3 tablespoons cornstarch
1/4 cup cold water
2 cups chicken broth
1/4 cup teriyaki sauce
1/4 cup soy sauce
1/2 teaspoon pepper
1/2 teaspoon ground ginger
1/8 to 1/4 teaspoon cayenne pepper
1 garlic clove, minced

Steps:

  • In a large skillet or wok, stir-fry chicken in oil over medium-high heat for 10 minutes or until juices run clear. Remove chicken and set aside., In the same skillet, stir-fry the broccoli, cauliflower, carrots and onion for 5-8 minutes or until tender. Combine the cornstarch and water until smooth. Add the remaining ingredients; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chicken to skillet and heat through.

This recipe has been adopted and edited by me in February 2005. You can easily make this dish a little hotter by adding more fresh ginger. I hope you will enjoy this newly edited recipe.

Number Of Ingredients 16

1 piece lemongrass or 1/2 lemon, rind of
1/2 inch fresh ginger
2 cloves garlic
2 tablespoons sunflower oil
10 ounces boneless skinless chicken breasts, thinly sliced
1/2 red bell pepper, seeded and sliced
1/2 green bell pepper, seeded and sliced
4 scallions, chopped
2 medium carrots, cut into matchstick size pieces
4 ounces baby green beans
2 tablespoons oyster sauce
1 pinch sugar
salt & freshly ground black pepper, to taste
1/4 cup lightly salted peanuts, crushed
1/4 cup chopped fresh cilantro
cooked rice or Asian noodles

Steps:

  • Thinly slice the lemon grass (or lemon rind).
  • Peel and chop the ginger and garlic.
  • Heat the oil in a large wok style pan over high heat.
  • Add the lemon grass (or lemon rind), ginger and garlic and stir-fry for 30 seconds, or until brown.
  • Add the chicken and stir-fry for 2 minutes.
  • Then add the vegetables and stir-fry for 4 to 5 minutes, or until the chicken is cooked through and the vegetables are almost cooked.
  • Finally stir in the oyster sauce, a pinch of sugar and seasoning to taste and stir-fry doe another minute for flavors to blend.
  • Serve immediately, sprinkled with the crushed peanuts and freshly chopped cilantro leaves on top accompanied with cooked rice or Asian noodles.

  • Combine the chicken, dark sweet soy sauce and ground white pepper. In a separate bowl, combine the oyster sauce, fish sauce and sugar. Place a large pot of water on a high heat (you’ll cook your noodles in here later). Heat the vegetable oil in a wok or large frying pan over high heat. Add the garlic and onion and stir-fry for 30 seconds. Add the chicken and stir-fry until almost cooked. Add the ginger and mushrooms and stir-fry for a further minute or until the mushrooms are wilted slightly. Turn the heat off while you cook your noodles. Place the rice stick noodles in the boiling water and cook for 2 minutes or until just tender. Drain and add them back to your chicken and mushroom stir-fry. Turn the heat back on to high. Add the oyster sauce mixture and your spring onions. Stir-fry until well combined. Serve warm. *NOTES: Instead of fresh mushrooms, you can use dried shitake and/or dried wood ear mushrooms. Simply soak them in hot water for 10 minutes to rehydrate before using.
