2 tablespoons chili powder
2 tablespoons salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground black pepper
1 tablespoon sugar
2 teaspoons dry mustard
1 bay leaf, crushed
4 pounds beef brisket, trimmed
1 1/2 cups beef stock

Steps:

  • Preheat the oven to 350 degrees F.
  • Make a dry rub by combining chili powder, salt, garlic and onion powders, black pepper, sugar, dry mustard, and bay leaf. Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.
  • Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan. Lower oven to 300 degrees F, cover pan tightly and continue cooking for 3 hours, or until fork-tender.
  • Trim the fat and slice meat thinly across the grain. Top with juice from the pan.

1 pound ground beef that is extremely lean
1/2 cup onion, chopped
1/4 cup green bell pepper, chopped
ketchup, 1 cup
1 cup of water
1 tablespoon brown sugar, tightly packed
2  teaspoons WORCESTERSHIRE SEASONING
1 teaspoon mustard, yellow
1/2 teaspoon salt (garlic)
If desired, add hot sauce.
Texas toast bread, 6 slices
12 slices (3/4 oz.)

Steps:

  • In a 12-inch skillet, cook ground beef over medium heat until no longer pink.
  • Add the onion and bell pepper and simmer for another 3-4 minutes, or until the veggies are tender.

  • Reduce the heat to low and cook for 5-10 minutes, or until the sauce has thickened.
  • Preheat the broiler.

  • slice of cheese on top of each; broil until melted.
  • Add 1/2 cup beef mixture and 1 slice cheese to each; broil for 1 minute or until cheese is melted. Serve hot.
