We've had this at our Family Reunion for years! It's always been a hit with everyone. I always bake the potatoes a day or two before and refrigerate.It makes cooking time very short!

Number Of Ingredients 9

8-10 large potatoes, baked
2 stick(s) butter, softened
1 - 32 ounce(s) sour cream
10 slice(s) bacon, fried
1 bunch(es) green onions, sliced
1 can(s) green chilies,drained & chopped
4 cup(s) cheddar cheese, shredded
1 package(s) ranch dressing,dry
- salt and pepper, to taste

Steps:

  • Bake potatoes and refrigerate the night before. There easy to handle when you go to slice them.
  • Mix ranch dressing, green chilies & sour cream the night before. It gives it time to marry the flavors. But not necessary.
  • Also go ahead and fry the bacon and crumble it. Stick in the refrigerate over night.
  • Also slice the green onions and put in refrigerator.
  • The more you do the night before the easier it is the day of the BBQ or party! It's easy peasy!
  • Preheat oven to 350 degrees.
  • Slice potatoes with a mandolin. That way potatoes warm evenly. Use a casserole dish 9X13 or larger if you have one. Spray with PAM or what ever you like or even butter it. You don't want it to stick.
  • Put a layer of potatoes,butter, sour cream then cheese. Till the last layer that's when you use the bacon. The green onions go on after it comes out of oven. Sometimes I just sit aside the green onions in a bowl and let them help them selves as some don't like onions at all! Enjoy!
  • Bake for 35-45 minutes

Modern Family actor Eric Stonestreet got this fantastic potato casserole recipe from his great-aunt Elsie Ball. Stonestreet calls them "Kansas potatoes" because he's from Kansas. "I don't think Texas will mind," he says. 2 1/2 sticks unsalted butter—1 1/2 sticks cubed, 1 stick melted
1 large onion, finely chopped
Kosher salt
Pepper
1/4 cup plus 2 tablespoons all-purpose flour
2 1/2 cups chicken stock or low-sodium broth
2 1/2 cups cornflakes
1 cup plain dry breadcrumbs
4 pounds baking potatoes—peeled, shredded and squeezed dry
16 ounces sour cream

Steps:

  • Preheat the oven to 350°. In a large skillet, melt the 1 1/2 sticks of cubed butter. Add the onion and a generous pinch of salt and cook over moderate heat, stirring occasionally, until softened, about 7 minutes. Whisk in the flour and cook, whisking constantly, until bubbling, about 2 minutes. Gradually whisk in the stock and bring to a boil over moderately high heat, then simmer over moderately low heat until the sauce is thickened and no floury taste remains, 8 to 10 minutes.
  • In a medium bowl, toss the cornflakes with the breadcrumbs and the 1 stick of melted butter. Season with salt and pepper.
  • In a large bowl, combine the sauce with the potatoes, sour cream, 2 teaspoons of salt and 1 teaspoon of pepper and mix well. Scrape into a 9-by-13-inch baking dish and bake for about 20 minutes, until bubbling. Sprinkle the cornflake mixture evenly over the potatoes and bake for 20 to 25 minutes longer, until the topping is browned and crisp. Let stand for 10 minutes before serving.
