1 cup hot water
6 dried Chinese black or shiitake mushrooms (1/2 oz)
8 oz uncooked soba (buckwheat) noodles or whole wheat spaghetti
1 tablespoon vegetable oil
1 large onion, sliced
1 package (8 oz) sliced mushrooms (3 cups)
8 oz fresh shiitake, crimini or baby portabella mushrooms, sliced
1/3 cup teriyaki sauce
1/4 cup chopped fresh cilantro
1 tablespoon sesame seed, toasted, if desired

Steps:

  • In small bowl, pour hot water over dried mushrooms. Let stand about 20 minutes or until soft; drain. Rinse with warm water; drain. Squeeze out excess moisture from mushrooms. Remove and discard stems; cut caps into 1/2-inch strips.
  • Meanwhile, cook and drain noodles as directed on package.
  • In 12-inch skillet, heat oil over medium-high heat. Cook onion in oil 3 minutes, stirring frequently. Stir in all mushrooms; cook 3 minutes, stirring frequently. Stir in teriyaki sauce; reduce heat. Partially cover and simmer about 2 minutes or until vegetables are tender. Stir in noodles, cilantro and sesame seed.

Noodles
4 ounces uncooked thin rice noodles, broken in half
Tuna
1 1/2 pounds (3/4-inch thick) tuna, marlin, or halibut steaks
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon Land O Lakes® Butter
1 tablespoon sesame or vegetable oil
2 teaspoons finely chopped fresh garlic
1/3 cup rice vinegar or white vinegar
1/3 cup teriyaki sauce
1 teaspoon finely chopped fresh ginger root *
Rice
1/4 cup sliced green onions
1 medium carrot, peeled, shredded
2 cups cooked rice

Steps:

  • Cook noodles according to package directions; drain. Set aside.
  • Sprinkle both sides of tuna steaks with salt and pepper.
  • Heat butter and oil in deep 10-inch skillet; stir in garlic. Add tuna steaks. Cook over medium heat, turning once, 5-6 minutes or until browned. Stir in vinegar, teriyaki sauce, and ginger root. Reduce heat to medium low; cook 8-10 minutes or until internal temperature reaches 145ºF and fish flakes easily with fork. Use spatula to remove tuna from skillet; keep warm.
  • Add onions and carrot to sauce in skillet. Cook over medium heat 1 minute. Stir in cooked noodles and rice. Increase heat to medium high;cook, stirring constantly, 2-3 minutes or until heated through.
  • Serve hot tuna steaks on fried noodles and rice.

  • Prep time: 25 minutes, plus marinating. Cook time: 35 minutes.

    Begin by making the marinade. Mix the hot water and the sugar in a medium roasting dish, stirring to allow the sugar to melt and the water to cool. This should only take a few minutes.

    Add the soy, ginger, garlic and chilli and mix well.

    Next, add the chicken and leave to marinate for 30 minutes. You don’t have to marinate at all if you are in a rush, but if you are cooking for the next day, then marinate in the sauce overnight and this will really soak into the chicken. Even a few hours will make a difference, if you have the time.

    Preheat the oven to 200°C/fan 180°C/gas 6.

    Bake the chicken for 25 minutes, until cooked through.

    Take the chicken pieces out of the roasting dish, leaving the marinade behind. Add the 5 nests of noodles, flipping them over to coat them in the liquid. If your marinade has become quite dry, you can add up to another 300ml of hot water.

    Put a piece of chicken back on top of each noodle nest and then put back into the oven for 10 minutes to allow the noodles to absorb all that moisture.

    Take out and garnish with the coriander, spring onions, red chilli and sesame seeds, and your chicken noodles are ready to eat.
