Tasso is a spiced, smoked pork used to flavor many of Louisiana's hallmark dishes. Coffee gives this thin gravy an incredible depth of flavor.

Yield 3 1/4 cups

Number Of Ingredients 8

2 tablespoons butter
½ pound tasso, diced
3 tablespoons all-purpose flour
1 cup brewed coffee
2 cups chicken broth
1 fresh thyme sprig, minced
¼ teaspoon salt
¼ teaspoon pepper

Steps:

  • Melt butter in a skillet; add tasso, and saute until browned. Whisk in flour, and cook, whisking constantly, until lightly browned. Whisk in coffee and broth; simmer, whisking occasionally, 20 minutes. Stir in thyme, salt, and pepper.

1 pound peeled, medium-size raw shrimp
1 tablespoon barbecue seasoning
3 tablespoons olive oil
½ cup butter
½ cup chopped tasso ham*
? cup all-purpose flour
1?½ cups chicken broth
½ cup half-and-half
2 tablespoons chopped fresh parsley

Steps:

  • Devein shrimp, if desired. Rinse and pat dry with paper towels. Sprinkle barbecue seasoning evenly over shrimp.
  • Sauté shrimp in hot oil in a large skillet over high heat 3 to 4 minutes or just until shrimp turn pink. Remove shrimp from skillet.
  • Melt butter in skillet over medium heat; add tasso ham, and sauté 5 minutes. Gradually whisk in flour. Cook, whisking constantly, 1 1/2 to 2 minutes or until mixture is golden brown. Whisk in chicken broth and half-and-half. Bring to a boil. Boil, whisking constantly, 6 to 8 minutes or until smooth and thickened. Stir in shrimp and parsley.
  • *Smoked ham or hot smoked sausage may be substituted.
  • Note: For testing purposes only, we used McCormick Grill Mates Barbecue Seasoning.

For the Shrimp: toss the shrimp and reserved 2 tablespoons shrimp spice together and let sit in fridge for at least 30 minutes before cooking. 5. To finish and assemble the dish: heat a large non stick large skillet over medium high heat. Add the butter and olive oil and cook until the butter is bubbling and hot. Add the shrimp in a spiral starting at the edge of the pan spiraling inward. By the time you have finished spiral, return to the first shrimp and flip each shrimp. When done flipping, remove starting again at first shrimp. 6. To plate, mound grits in the center. Place shrimp on top and spoon gravy over shrimp and around. "
