1/3 cup (75 ml) canola oil
1 leek, thinly sliced (about 2 cups/500 ml)
4 eggs, lightly beaten
3/4 lb (340 g) firm tofu, cubed and patted dry
Salt and pepper
1 cup (250 ml) water
3 tbsp (45 ml) lime juice
3 tbsp cane or brown sugar
3 tbsp (45 ml) fish sauce (nuoc mam)
1 tbsp (15 ml) Sriracha
3 cloves garlic, chopped
3 tbsp (45 ml) canola oil
2 tbsp sweet paprika
2 cups (180 g) bean sprouts
