TRADITIONAL JAPANESE RECIPE: Tamagoyaki is thin layers of eggs cooked and rolled into a log using a special rectangular Tamagoyaki pan. How it’s seasoned is different by each household. Some Tamagoyaki is very sweet. In my family we both are from two different schools. I like it salty, my wife likes it sweet. This Tamagoyaki recipe is the traditional recipe, the one you would eait if you order fried eggs cooked in restaurants all over japan. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

4 Eggs
1 tablespoon Mirin
0.25 teaspoon Soy Sauce
1 teaspoon Oil
0.25 teaspoon Salt

Steps:

  • 01 - Mix Eggs, Salt, Soy Sauce and Mirin in a bowl. 02 - Heat a pan at medium high temperature and add the Oil. A rectangular Tamagoyaki pan is best, but a round pan can work as well. 03 - Pour a thin layer of Egg mixture in the pan, tilting to cover the whole bottom of the pan. 04 - When the Egg mixture has set a little, and there is still a little bit of liquid on the top, gently roll into a log until you reach the end of the pan. 05 - Pour some more Egg mixture to again cover the whole bottom of the pan, with the roll of egg at the end. 06 - When the new layer has set, roll the log back onto the the cooked thin Egg and roll to the other end of the pan. 07 - Repeat adding Egg to the pan and rolling back and forth until the mixture is used. 08 - Remove from the pan and cool for 3-4 minutes. Slice and serve.

4 eggs
4 tablespoons prepared dashi stock
1 tablespoon white sugar
1 teaspoon mirin (Japanese sweet wine)
½ teaspoon soy sauce
½ tablespoon vegetable oil

Steps:

  • Whisk eggs, dashi stock, sugar, mirin, and soy sauce together in a bowl.
  • Heat 1/3 of the oil in a large nonstick skillet over medium-high heat. Add about 1/3 of the egg mixture and quickly swirl the pan to evenly cover the bottom. Start rolling up the omelette from one side to the other as soon as it is set.
  • Keep the roll to one side, then add another 1/3 of the oil to the skillet and another 1/3 of the egg. Swirl the pan, ensuring the entire bottom is covered, including around and underneath the first roll. Cook until set. Roll up from the side containing the first roll, so that is now at the center.
  • Repeat the process with the remaining oil and egg. Transfer rolled omelette to a bamboo rolling mat. Roll up tightly and allow to cool for a few minutes.
  • Unwrap the omelette and slice into 6 pieces. Serve warm or cold.
