- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the taco sauce, chilies and salt. Cover and cook over medium-low heat for 6-8 minutes or until heated though. Spoon over chips; sprinkle with cheese.

Tacos can be a messy meal but when eaten as a salad with baked tortilla chips, there's less of a mess. Instead of using cooked and seasoned ground beef, this recipe calls for salsa-flavored burgers.

- In a medium bowl combine beef and salsa. Shape beef mixture into four 3/4-inch-thick patties.
- For a charcoal grill, place burgers on the grill rack directly over medium coals. Grill, uncovered, for 14 to 18 minutes or until done (160 degrees F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place burgers on grill rack over heat. Cover; grill as above.)
- Meanwhile, divide lettuce among four serving plates. Top with specified amounts of beans, tomato, and sweet pepper. In a small resealable plastic bag place the avocado, water, lime juice, crushed red pepper (if using), and cumin. Seal bag and knead the bag until avocado is mashed and mixture is combined.
- Place a grilled burger with each salad. Snip a hole in one corner of the bag containing the avocado mixture; squeeze the mixture over burgers and arrange tortilla chips on plates.

- Preheat oven to 350°F. In a large skillet over medium high heat, brown the ground beef, chorizo and chopped onion. Drain any fat and add the taco seasoning, chili powder, garlic powder and onion powder. Stir well to combine. Add the refried beans, tomatoes, soup and olives; mix well and heat thoroughly. Spray a 9 x 13” dish with non-stick cooking spray. Reserve 2 cups of the meat mixture for the top of the casserole. Set aside. Layer half the corn tortillas on the bottom. Then make a layer with half of the remaining meat mixture. Sprinkle one cup of the cheese on top and half of the crumbled tortilla chips. Repeat another layer of tortillas, meat, cheese and chips. Finish with the 2 cups of reserved meat mixture and the remaining 2 cups of cheese on top. Pour the salsa over the top and bake for 30 minutes. Garnish with sour cream and chopped green onions, if desired.
