WATER BISCUITS – THE NOSEY CHEF

Water biscuits – The Nosey Chef image

Total Time P

Prep Time P

Cook Time 10 minutes

Yield 12 small biscuits or 6 larger ones

Number Of Ingredients 4

120g (1 US cup) plain flour
1 tbsp vegetable oil
Half tsp Maldon sea salt
About 50ml (quarter US cup) cold water

Steps:

  • Combine the flour, oil and salt in a food processor.
  • With the machine running, slowly add the water until the mixture comes together (It will look grainy rather than suddenly balling like pastry). Stop the machine and check if the dough will form a ball. If not, more water is needed.
  • Form the dough into a flat round, wrap and chill for 30 mins.
  • Heat an oven to 220°C.
  • Once the dough is rested and chilled, roll it out on a floured surface to about 2mm thick. Alternatively, run it through a pasta machine to the second setting for a really even finish.
  • On a floured surface, prick the dough all over with a fork or a dough docker. Use a cookie cutter to cut the dough into biscuits the size you like.
  • Carefully transfer the biscuits to a baking tray lined with floured baking paper or a silicone lining. Bake in the oven for 10–15 mins until just turning golden. Cool on a wire rack.

Prep Time 45 minutes

Cook Time 15 minutes

Yield 16 servings

Number Of Ingredients 9

3 c.

All-purpose Flour

2 tsp.

Sugar

2 1/2 tsp.

Salt

4 tbsp.

Fat (Olive Oil, Melted Butter, Bacon Drippings, Melted Coconut Oil, Or Melted Ghee)

1 c.

Water

FOR THE OPTIONAL ADDITIONS:

1 tbsp.

Minced Fresh Herbs (Thyme, Rosemary, Sage, Or Dill)

1 tbsp.

Seeds (Sesame, Poppy, Fennel, Or Pumpkin)

1/4 c.

Shredded Hard Cheese

Steps:

  • Heat oven to 450ºF. Line two large sheet pans with parchment paper. In a large bowl, sift flour, sugar, and salt. If using any additions, add them at this time. Add fat and water to flour mixture. Mix until combined; the dough will be tacky. Flour a cool work surface. Divide dough in two. Roll the dough halves to rectangles 1/8 inch thick. Brush dough lightly with olive oil. Cut dough into desired cracker shapes using a sharp knife or biscuit cutter. Prick the crackers with a fork. Using a spatula or pastry scraper, transfer the crackers to the prepared sheet pans. Be careful not to crowd the crackers. Bake in the oven 12–15 minutes or until golden brown. If the crackers along the edges bake faster, transfer them to a cooling rack and allow the remaining crackers to bake. Transfer crackers to cooling rack. Crackers will crisp as they cool. Serve crackers immediately or store in an airtight container on the counter for up to a week.

  • Roll out the dough on a lightly floured surface into a rectangle approximately 50 x 25cm and as thin as possible. Brush a little water over the surface of the dough, scatter 1 tsp salt flakes over and press in lightly. Prick the dough all over with a fork, then cut into 18 squares. Place on the prepared trays – don’t worry if they stretch a bit. Bake for 10-15 mins until the biscuits feel dry and sandy but are still pale – they may still feel soft but will harden up when cooling. Transfer to a wire rack and leave until completely cool. Will keep in an airtight container for up to 2 weeks.
