Sichuan Spicy Cucumber recipe - Simple Chinese Food image

Cucumber is one of my favorite vegetables. I don’t seem to have cucumbers in my recipes. I will use it to make a simple cold dish today, with the spicy and delicious Sichuan flavor aftertaste.

Total Time 15 minutes

Yield 3

Number Of Ingredients 11

2 pieces Cucumber
1 teaspoon salt
6 grams Vinegar
1 teaspoon Chicken Essence
20 capsules pepper
2 pcs Dried chili
3 grams sesame oil
Right amount Broth
3 tablespoons Sugar
10gram Sauerkraut
2 tbsp Vegetable oil

Steps:

  • The ingredients are prepared, the cucumber is washed and cut into thin strips
  • Heat a little vegetable oil in the pan, add the peppercorns to a low heat and fry them until fragrant, remove them, and then add the washed and cut dried peppers. Stir slightly on the low heat and turn off the heat.
  • Turn off the heat, put in the cucumber strips, stir-fry evenly, then add a little sesame oil and mix well
  • Combine the broth, salt, sugar, chicken essence, and vinegar into a flavored sauce, add it to the cucumber, mix well, add sauerkraut, marinate for about ten minutes, and serve.
