Here's a classic quiche recipe that is filled with savory flavors of onions, bacon and Swiss cheese.

Crust
1 cup all-purpose flour
1/4 teaspoon salt
1/3 cup cold Land O Lakes® Butter cut into chunks
3 to 4 tablespoons cold water
Filling
8 slices crisply cooked bacon, crumbled
1/3 cup chopped onion
4 ounces (1 cup) shredded Swiss cheese
2 cups Land O Lakes® Half & Half
4 large Land O Lakes® Eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
Dash hot pepper sauce, if desired

Steps:

  • Heat oven to 375°F.
  • Combine flour and 1/4 teaspoon salt in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in enough water with fork, just until flour is moistened. Shape dough into ball; flatten slightly.
  • Roll out dough on lightly floured surface into 12-inch circle. Fold into quarters. Carefully place pastry into ungreased 9-inch glass pie pan. Carefully unfold pastry, pressing firmly against bottom and sides of pie pan. Trim crust to 1/2 inch from edge of pan. Crimp or flute edge.
  • Sprinkle bacon onto crust; top with onion and cheese. Combine all remaining filling ingredients in bowl; beat with whisk until well mixed. Pour over cheese in pan.
  • Bake 40-45 minutes or until center is set. Let stand 10 minutes before cutting.

Number Of Ingredients 8

1 recipe pastry for a 9 inch single crust pie
6 slices bacon
1 onion, chopped
3 eggs, beaten
1?½ cups milk
¼ teaspoon salt
1?½ cups shredded Swiss cheese
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Line pastry with a double layer of aluminum foil. Bake in preheated oven for 8 minutes. Remove foil and bake for 4 to 5 minutes more, or until crust is set. Reduce oven temperature to 325 degrees F (165 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, crumble and set aside. Reserve 2 tablespoons bacon grease in skillet. Cook onion in reserved drippings until tender; drain and set aside.
  • In a large bowl, mix together eggs, milk and salt. Stir in bacon and onion. In a separate bowl, toss cheese and flour together. Add cheese to egg mixture; stir well. Pour mixture into hot pastry shell.
  • Bake in preheated oven for 35 to 40 minutes, or until knife inserted into center comes out clean. If necessary, cover edges of crust with foil to prevent burning. Let quiche cool for 10 minutes before serving.

COMPANY QUICHE LORRAINE WITH BACON AND SWISS | JUST A ...
This is not a dish to make very often due to the calories, but a dish that I do enjoy serving for special occaisions and company. It's very rich and elegant, and when sliced into fairly small slices and served with salad and fresh fruit, it really isn't that terrible for you.   • Place pastry into 9" pie dish and flute edge. Bake in hot 450 oven for 6-7 minutes til lightly browned. Remove from oven and reduce to 325 degrees. Fry bacon til crisp, drain, and crumble into small pieces. Place on bottom of pie shell. Top evenly with shredded cheese. In medium bowl, beat eggs, whisk in heavy cream, salt, pepper and nutmeg if desired. Pour over slowly and evenly. Bake at 325 for 35-40 minutes until almost set in the very middle. VERY center should jiggle just a little. (But not runny, just like jello.) *Let cool 25 minutes before serving. Perfect amount of time to make some salad and cut up some fresh fruit. At least 8 servings. *You can also bake this in a tart pan, but since I don't have any, I can't give you any directions on that... (yet...) Christmas is coming... ;)
