180 gram All-Purpose Flour
20 gram Granulated Sugar
1 1/4 teaspoon Instant Dry Yeast
100 milliliter Milk
250 gram Red Bean Paste

Steps:

  • Divide the Red Bean Paste (250 gram) into 8 pieces, roll into balls.
  • Mix Instant Dry Yeast (1 1/4 teaspoon), Granulated Sugar (20 gram), and Milk (100 milliliter) together, let it rest for 10 minutes.
  • Add the yeast mixture into the All-Purpose Flour (180 gram), mix and form a dough.
  • Knead the dough for about 8 minutes until the surface is smooth. Cover with cling film or kitchen towel, let it rest for 30 minutes.
  • Divide the dough into 8 pieces, press it to form a dish. Add in red bean paste filling, seal it and roll a ball.
  • Place the dough on the parchment paper and put in a steamer. Cover the lid and let it rest for 30 minutes. The dough will grow bigger.
  • Steam at high heat for about 12 minutes, turn off the heat and wait for 3 minutes to take the buns out. Serve and enjoy!

Homemade Chinese Red Bean Buns with soft and slightly sweet surface. Have one bite, you will see the smooth sweet red bean paste inside. It is a good idea to serve this homemade red bean buns with some milk or soy milk.

200 g red bean paste filling
300 g all purpose flour
40 g sugar
1.5 tsp. sugar tolerant instant yeast
150 ml warm water ( ,or 180ml to 185ml warm milk, the best temperature for liquid is around 35 degree C.)
1 tbsp. vegetable oil ( ,corn oil)
a tiny pinch of salt

Steps:

  • In a stand mixer, place all of the dough ingredients in and then knead for 6-8 minutes at slow speed.
  • Shape the dough into a ball and set aside in warm place for 1 hour or until double in size (the time needed is very much depending on your room temperature).
  • Add around 2 tablespoon of flour in the dough and continue kneading the dough for 2 minutes at low speed in a stand mixer.
  • Then transfer out and divide the dough into 6 or 8 portions. Shape each portion to a round ball. Press it to a wrapper with thin edges and thicker center. Place around 1.5 tablespoon of red bean fillings in center. Seal completely and turn over and shape it into a dome.
  • Place the buns on baking papers and then place in steamer. Cover the lid and rest for another 15 to 20 minutes at a room temperature around 28 degree C to 30 degree C. In cold water days, heat water in a pot for several minutes until warm but not boiling and then place the steamer on the warm water, rest for 15 to 20 minutes.
  • Start the fire and steam the buns for another 20 minutes, turn off fire and stand for 5 minutes before enjoying.
  • Re-steam the buns if they are cooled. No changes for the taste.

  • To Prep Combine sugar, yeast, oil and warm water in a bowl and gently stir to mix. Allow to rest for 10 mins. Combine flour and baking powder in a separate bowl. Pour all ingredients into a mixing bowl and knead until a smooth, non-sticky dough is formed. Kneading by mixer using a hook will take about 2 mins while hand kneading will take about 10 mins. Lightly oil a bowl and place in the dough. Cover with cling wrap and allow to rest for 1 hr in warm temperature so that the dough will double up in size. Meanwhile, split the red bean paste into 12 equal portions and shape them into balls. Once the dough has risen, punch the dough down in order to release any air bubbles. Fold and knead the dough a few times and then reshape it back into a smooth ball. Dust some flour on your working bench. Cut the dough into 2. Keep one dough covered with damp cloth and roll the other into a log. Cut the log into 6 equal sizes and shape them into smooth balls. Store the smooth dough balls on parchment paper and keep covered with damp cloth. Repeat with the other dough. Using a rolling pin or your palm, flatten one dough at a time. The centre of the dough should be slightly thicker while the edge should be rolled out thinner. Put one ball of red bean paste in the middle of the dough. Gather and pinch the edges to seal the bun. Repeat with remaining dough and red bean paste balls. Place all buns in a large tray and cover with damp towels. Allow to proof for 15 mins. To know if they have proofed, gently press the side of a bun. If the indentation stays, they are ready. To Cook Using a large, clean towel, wrap the lid of your steamer and tie with a string to secure the towel in its place. The towel helps to prevent water droplets from dripping back to the bun. If steaming with bamboo basket, the wrapping step is not required. Steam buns over boiling water for 10 mins. Remember to space the buns out a little as the buns will expand once steamed. At the end of the steaming time, turn of the heat and allow to rest for 5 mins in the steamer without opening the lid. Serve fresh from the steamer. To store them, simply keep them in individual zip lock bags and freeze once they have cooled down. Steam them straight from the freezer.
