Swapping bread for baked sweet potatoes makes eating a Sloppy Joe so much healthier! This savory-sweet dish is gluten-free, dairy-free, whole30 and Paleo.

4 medium (7 oz each sweet potatoes, washed and dried)
1/2 lb 93% lean ground beef
1 teaspoon seasoned salt (such as Montreal Steak)
1/3 cup chopped carrot
1/3 cup chopped onion
1/3 cup chopped mushrooms
2 tablespoons chopped red bell pepper
1 clove garlic (minced)
1/2 tbsp red wine vinegar
1/2 tbsp Worcestershire sauce
8 oz can tomato sauce
2 teaspoons tomato paste
1/3 cup water
1 chopped scallion (for garnish)

Steps:

  • Cook the sweet potatoes by poking holes all over with a fork, then cook in microwave 7 to 10 minutes, or slow cooker low 6 to 8 hours or oven 425F about 45 minutes, or until tender.
  • Heat a medium skillet over medium high heat. Add the meat and steak seasoning to the pan and cook, breaking it up into small pieces. Add the onion, garlic, carrots, mushrooms and red peppers to the skillet. Reduce heat to medium and add red wine vinegar and Worcestershire sauce, cook 4 to 5 minutes. Add tomato sauce, paste and water to the skillet, stir to combine. Cover and reduce heat to simmer and cook until carrots are tender, about 15 to 20 minutes.
  • To serve, cut sweet potatoes open, sprinkle with a pinch of salt and top each with 1/2 cup of meat and scallion for garnish.

2 medium sized Sweet Potatoes
1 cup Brown Lentil (washed and rinsed)
1 Tsp Olive oil
1 medium sized Red Onion (finely chopped)
4 cloves Garlic (minced)
½ medium Red or Green Bell Pepper (diced)
½ Tsp Ground Cumin
1 Tsp Chili Powder
½ Tsp Paprika
2 Tbsp Coconut Sugar
1 150z Tomato Sauce
2 Tbsp Mustard sauce
1 Tsp Dark Soy Sauce
½ Tsp Cider Vinegar
Salt & Pepper (to taste)

Steps:

  • Prick the Sweet Potatoes using a fork in several places. Place it on a high rack in the oven and microwave on high for about 12-14 minutes.
  • Meanwhile, Take a saucepan with 2 cups of Water or Vegetable broth and bring it to a boil. As it comes to a boil, add the Lentil and simmer for 7-8 minutes uncovered. It should get thoroughly cooked but should not turn mushy!
  • In the meantime, heat olive oil in a pan. As the oil shimmers, add the chopped onions, minced garlic, and chopped bell peppers. Saute over medium-high heat until they tenderize for 4-5 minutes.
  • Season with Salt & Pepper. Add some ground cumin, chili powder, paprika, tomato sauce, mustard sauce, Soy Sauce, Cider Vinegar, Coconut Sugar. Stir to combine everything.Now, add the cooked Lentil and stir until combined. Cook for 5-6 minutes until thoroughly heated through stirring occasionally.
  • Finally, take the Sweet Potatoes out of the oven. Cut open the sweet potatoes in half, lengthwise. Press open to make your sweet potato into a well. Use a fork to scoop out some of the flesh of the sweet potato. Mix the remaining Sweet Potato flesh with the vegan sloppy joe filling. Stuff this in the well of the Sweet Potato. Make a mound.
  • Top with chopped Cilantro and Avocado Crema.
